Combine 1/4 cup Greek yogurt or crema, 1 large clove of garlic, 1 teaspoon of pickled jalapeño, 6-8 fresh dill fronds, 1/2 teaspoon of dried chives and a handful of fresh cilantro into a blender and blend until smooth
Add a pinch of salt and black pepper and a good drizzle of olive oil and pulse to incorporate
Continue drizzling olive oil until your desired consistency is reached and set aside
Combine 1 cup of finely chopped cabbage, 1 cup of finely chopped leafy green lettuce, 1/2 of a finely chopped English cucumber, 1/2 finely chopped green bell pepper, 3 finely chopped spring onions, 1/3 cup of finely chopped fresh herbs and 1 tablespoon of pickled jalapeños in a large bowl
Add half of the dressing and toss to combine
Add additional dressing and grated parmesan, if desired
