Sweet Pepper Salsa
A sweet and crunchy salsa full of peppers, heirloom tomatoes, jalapeño and fresh lime.

- 1 large green bell pepper, diced
- 1 large red sweet pepper, diced
- 1 large orange sweet pepper, diced
- 1 large yellow sweet pepper, diced
- 1 large heirloom tomato, diced
- 1 medium jalapeño, seeds removed, finely minced
- 1/2 red onion, diced
- 1 small bunch of fresh cilantro, finely chopped
- 1 large lime
- salt and black pepper
Combine the diced peppers, tomato and red onion in a large bowl
Add the finely minced jalapeño and finely chopped cilantro and toss to combine
Add the juice from a large lime and a pinch of salt and black pepper and toss again
Taste and add more salt or black pepper, if necessary
Serve immediately or chill in an airtight container until ready to serve
