Combine 113 grams of room temperature butter, 4 ounces of room temperature mascarpone or cream cheese, 1 large egg and 2 teaspoons of pure vanilla extract in a large bowl and use an electric hand mixer to cream everything together until smooth and fully combined
Add 210 grams of granulated sugar and mix until fluffy
Add 200 grams of all purpose flour, 5 grams of espresso powder, 1/2 teaspoon of baking powder and 1/2 teaspoon of salt and mix until just combined
Cover the bowl and chill the dough for an hour
Preheat your oven to 375°
Use a lightly greased cookie dough scoop to scoop tablespoons of dough out and roll the dough into a smooth ball
Place the dough onto a parchment lined baking sheet leaving 2 inches apart
Bake in a 375° oven for 10 minutes or until the cookies are just set
Let the cookies cool completely before dusting with confectioners sugar and cocoa powder
