Tiramisu Cookies

Soft, tender cookies made with mascarpone and espresso powder and dusted with cocoa powder for that classic tiramisu vibe.

Ingredients

  • 113 grams of butter, room temperature
  • 4 ounces of mascarpone or cream cheese
  • 1 large egg
  • 2 teaspoons of pure vanilla extract
  • 210 grams of granulated sugar (1 cup)
  • 200 grams of all purpose flour (about 1 2/3 cups)
  • 5 grams of espresso powder (about 2 teaspoons)
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • confectioners sugar (for dusting)
  • cocoa powder (for dusting)

Instructions

  • Combine 113 grams of room temperature butter, 4 ounces of room temperature mascarpone or cream cheese, 1 large egg and 2 teaspoons of pure vanilla extract in a large bowl and use an electric hand mixer to cream everything together until smooth and fully combined 
  • Add 210 grams of granulated sugar and mix until fluffy
  • Add 200 grams of all purpose flour, 5 grams of espresso powder, 1/2 teaspoon of baking powder and 1/2 teaspoon of salt and mix until just combined 
  • Cover the bowl and chill the dough for an hour
  • Preheat your oven to 375°
  • Use a lightly greased cookie dough scoop to scoop tablespoons of dough out and roll the dough into a smooth ball
  • Place the dough onto a parchment lined baking sheet leaving 2 inches apart
  • Bake in a 375° oven for 10 minutes or until the cookies are just set
  • Let the cookies cool completely before dusting with confectioners sugar and cocoa powder
