Tropical Coconut Smoothie

- 1 cup of coconut milk
- 1/2 cup of full fat greek yogurt (plain or vanilla)
- 40 grams of vanilla protein powder
- 2 large bananas, sliced and frozen
- 1/2 cup of coconut shreds
- 1 inch of fresh ginger, peeled
- 1 cup of pineapple, chopped
- 1 large mango, peeled
- additional coconut or almond milk (for thinning)
Combine ingredients in a blender and blend until smooth and creamy
Add additional coconut or almond milk to thin if necessary
Chill leftovers in an airtight container for up to 2 days
