Greek Salsa

Salsa are one of the easiest way to add a great layer of fresh flavors and textures to so many different dishes, but when most of us think about salsa, we automatically envision the classic jarred tomato salsa you’d grab at the grocery store or find on the table of your favorite Mexican restaurant. Although I do love that salsa, it is definitely not the only kind of salsa out there!

In addition to the many variations of the classic mexican inspired tomato salsa, there are fabulous fruit salsas like my pineapple salsa  and mango salsa, plus this super crunchy sweet pepper salsa and todays Greek inspired salsa.

This colorful salsa is full of your favorite Mediterranean flavors and pairs great with everything from gyros to kebabs and skewers, crostini or a big pile of crispy pita chips. I am really loving this fabulous salsa!

To make your batch of Greek salsa, simply combine 1 small diced English cucumber, about 4 ounces of quartered cherry tomatoes, 1/4 cup of diced red onion and 1/2 cup of thinly sliced black olives.

Add 1/2 teaspoon of dried oregano or dill (whichever you prefer), 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, 1 tablespoon of extra virgin olive oil, 1 tablespoon of balsamic vinegar and 1 tablespoon of fresh lemon juice and toss everything until fully combined.

This beautiful Greek salsa is simple, easy to whip up and even easier to make disappear! Add it to a gyro, serve it with some skewers, top a turkey burger with it or grab some pita chips and go to town!

Ingredients

  • 1 small English cucumber, shredded, drained
  • 4 ounces of cherry tomatoes, quartered
  • 1/4 cup of red onion, diced
  • 1/2 cup of black olives, thin sliced
  • 1/2 teaspoon of dried oregano or dill
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of fresh lemon juice

Instructions

  • Combine all of the ingredients in a mixing bowl and toss to combine
  • Taste to check if additional salt or black pepper is necessary
  • Serve immediately or chill in an airtight container
