I'm Fallon, and I specialize in food styling, project photography, food photography and recipe development. We lived on the tiny island of Okinawa, Japan for several years and I found myself cooking in a very small kitchen without an oven, but with easy access to incredibly fresh fruits, vegetables and some of the best seafood in the world. As a girl who used her oven almost every day, my cooking style had to adapt and this was an eye opening, educational experience that taught me so much about food and the many ways that you can accomplish beautiful dishes from around the world.

A great breakfast sandwich has it all – a flavorful protein, some melty cheese, an egg cooked exactly how you like it, something fresh and a really great type of bread. They are a complete meal that can be made ahead, are easy to take on the go and a good option for feeding a group and today, I am excited to give you my favorite breakfast sandwich recipes and some tips and tricks to making them turn out really good… This month I started a breakfast sandwich series. It’s the beginning of October, the mornings are a little cooler now and I started waking up craving something warm and satisfying – enter the breakfast sandwich. We usually do some sort of meal prep for weekday breakfasts, so I wanted all of these breakfast sandwiches to be able to be made ahead, taste good a few days down the road

Flatbread Breakfast Foldover
I am here again with another installment in my breakfast sandwich series with these bacon, egg and cheese flatbread breakfast foldovers. Soft flatbread filled with melted cheese, a fried egg and crispy bacon. These foldovers are simply delicious and since they come together quickly, they are great breakfast for busy mornings or to use as a meal prep breakfast for the work week. If you are looking for a great, simple breakfast… this is it! You can start by making your own soft flatbread using my favorite flatbread recipe here – or pick some up at your local bakery or grocery store. As long as it is soft and flexible, it will work for these foldovers. For the bacon, my favorite way to create beautifully crisp bacon is to lay them out on a baking sheet and bake in a 400 degree oven for 12-14 minutes or until crisp. Transfer

I have lots of other great apple cake recipes, from my apple fritter cake and this apple fritter focaccia to my sbriciolata di mele and of course my grandmas classic apple cake. If you have a simple sheet pan meal recipe in your back pocket, you will always have a go-to meal for busy nights or those days when you just don’t feel like standing over your stovetop and babysitting something until it is finished.
