Recipe Development
Welcome
I'm Fallon, and I specialize in food styling, project photography, food photography and recipe development. We lived on the tiny island of Okinawa, Japan for several years and I found myself cooking in a very small kitchen without an oven, but with easy access to incredibly fresh fruits, vegetables and some of the best seafood in the world. As a girl who used her oven almost every day, my cooking style had to adapt and this was an eye opening, educational experience that taught me so much about food and the many ways that you can accomplish beautiful dishes from around the world.

Berries & Cream Swiss Roll
One of the most beautiful desserts is a Swiss roll. A light, airy cake filled with something creamy and delicious and rolled into a gorgeous spiral. They are as eye catching as they are delicious and today, we are making a berries and cream version just perfect for the springtime. Also referred to as roulades or the Christmas special buche de noel, this delicate dessert can be made in so many different ways, but the one constant is that beautiful spiral. Making a Swiss roll is not as complicated as you may think and if you follow my simple steps, you can create this eye catching dessert right in your own kitchen. Let’s get started… Begin by preheating your oven to 350 degrees and generously grease a jelly roll pan. Line the bottom of the pan with parchment paper and set it aside for now. Separate 4 large eggs into

Maple Bourbon Glazed Ribs
Whenever I go to a new barbecue spot, I always want to try the ribs. Are they sweet, tangy, spicy? Is the sauce thick or thin? Does the meat fall of the bone? Eating a tender, saucy rack of ribs can be a delicious experience and that same experience can be had right in your own kitchen… Ribs can be cooked in a smoker, they can be boiled, grilled, roasted or my favorite version, which is slow baking until tender and broiling under caramelized. It is an easy recipe that always produces super tender ribs and today, we are glazing them in a sweet and smokey maple bourbon glaze that will have everyone asking, “Where did you get that sauce?”. The next time you are craving ribs or need a fabulous main course for a casual backyard barbecue or summer get together then you should add some bourbon and baby

Mocha Chocolate Chip Crumb Cake
Coffee and chocolate make great dance partners. Chocolate enhances coffee and coffee brings out the best in chocolate. They are a match made in heaven and this mocha chocolate chip crumb cake is a wonderful example of just how delicious these two are together. This cake is dense, fabulously moist and full of mini chocolate chips and it is topped with a sweet, buttery crumb topping. It really celebrates the pairing of chocolate and coffee and is quite easy to bake up on a lazy afternoon. Grab a cup of coffee and let’s get started… Begin by vigorously whisking 6 tablespoons of softened butter with 1 cup of granulated sugar, 2 large eggs, 1/2 cup of sour cream, 1/2 cup of whole milk and 1 teaspoon of vanilla extract in a large bowl until completely combined. Add 2 cups of all purpose flour, a tablespoon of espresso powder, 1 1/2

Beer Braised Carnitas
Carnitas are one of those classic proteins that are easy to make using a reasonably priced cut of meat with very little hands on time required. The pork is tender, juicy and wonderfully flavorful with fresh citrus, herbs, warm spices and beer in the braising liquid. This is a great recipe to make for a big group of friends and family or for meal prepping the whole week at once and whether you are planning to enjoy it in a warm tortilla, over rice or a big bed of crisp greens, one thing is for sure… you are going to love these beer braised carnitas. Let’s get started… Carnitas is traditionally made with pork shoulder or pork butt, both of which are very reasonably priced cuts of meat. Using a boneless portion will be less work, but they are a little more expensive. Using a bone-in piece will take a
