Sometimes the most simple things are the most fantastic and this is definitely the case when it comes to this lemon parmesan salad. Crunchy romaine dressed in olive oil, lemon juice, salt, black pepper and parmesan. It is simple, crisp, refreshing and delicious.

This recipe is super simple! Chop a head of romaine into bite sized pieces, wash it thoroughly and dry with paper towels. Place the lettuce in a large bowl and drizzle with about 2 tablespoons of a good olive oil. Toss the lettuce until all of the leaves are lightly coated in olive oil.
I love adding lemon zest to this salad. It really punches up the intensity of lemon flavors, so before I cut a lemon in half to juice it, I zest the outside right over the romaine and then squeeze in about 2 tablespoons of fresh lemon juice.
Add a big pinch of fine sea salt, some freshly ground black pepper and about a quarter cup of freshly grated parmesan and then give everything a good toss.
When it comes to the ingredients in this salad, fresh is going to make a really big difference, so I highly suggest using a fresh lemon, grinding fresh black pepper and grating fresh parmesan. It will make a huge difference in this amazing salad.

- a pinch of salt
