Japanese Cabbage Salad

While my husband and I were living in Japan, we ate out… a lot. It was hard not to! The food is so good and there are so many new, exciting options that we wanted to be sure to experience before we left that wonderful island…

Regardless of the type of restaurant we were at, there was a very good chance that at some point this simple cabbage salad would be on the table and I was always happy to see it. For something so basic, it is full of great flavor and compliments a wide variety of entrees.

It comes together in about a minute, so you can enjoy it whenever you crave this creamy, salty, tangy cabbage treat. Let’s get started…

Begin by gathering 10 ounces of angel hair cabbage, 3 tablespoons of a good quality mayonnaise, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of toasted sesame oil and some white sesame seeds.

Whisk the mayonnaise, soy sauce, rice vinegar and toasted sesame oil in a small dish or directly in the mixing bowl until everything is completely combined.

In addition to the dressing, you will want to toss in some white sesame seeds. I prefer them whole, but you can grind them down a little or even toast them in a 350 degree oven for about 5 minutes until they have a little color on them. However you decide to incorporate your sesame seeds, they along with the toasted sesame oil in the dressing are in important element of this salads overall flavor.

Keep the dressing and cabbage separate until you are ready to serve this salad. The cabbage tends to release its liquid and loose its crunchiness fairly soon after the salad is dressed, so you don’t want to mix in the dressing too far in advance.

When you are ready to serve your cabbage salad, add the dressing and a big pinch of sesame seeds and give everything a good toss…

This little side salad is crunchy and creamy with wonderfully salty, tangy flavors that you are going to love…
