This creamy tropical smoothie has beautiful flavors of coconut, pineapple, mango, ginger and tangy greek yogurt and with a simple liquid adjustment this smoothie can be made as a thick, scoopable smoothie bowl or with a more sippable texture if you want to take it with you on the go.

Begin by gathering 1 cup of coconut milk, 1/2 cup of full fat Greek yogurt, about 40 gram of your favorite vanilla protein powder, 2 large frozen bananas, 1/2 cup of coconut shreds, about 1 inch of peeled fresh ginger, 1 cup of pineapple chunks, 1 large mango and some almond milk if thinning is desired.
This recipe makes 4 servings, because this smoothie stores really well in the refrigerator for a few days in an airtight container. If you prefer a smaller amount, you can absolutely cut the recipe in half.
Combine everything in your blender and blend until smooth. Thats all you have to do. Simple, right? And if you prefer a looser, more drink like texture then you can add a splash of almond milk (or more coconut milk, if you prefer) and blend to combine.
Scoop your smoothie out into bowls or pour into glasses and garnish with some crushed granola and coconut flakes. I usually add a scoop of yogurt to my smoothie bowls, but this one is just so creamy already that I don’t feel like it needs it. It has a wonderful texture as is…

Ingredients
- 1 cup of coconut milk
- 1/2 cup of full fat greek yogurt (plain or vanilla)
- 40 grams of vanilla protein powder
- 2 large bananas, sliced and frozen
- 1/2 cup of coconut shreds
- 1 inch of fresh ginger, peeled
- 1 cup of pineapple, chopped
- 1 large mango, peeled
- additional coconut or almond milk (for thinning)
Instructions
- Combine ingredients in a blender and blend until smooth and creamy
- Add additional coconut or almond milk to thin if necessary
- Chill leftovers in an airtight container for up to 2 days
