Couve à Mineira – Brazilian Garlic Collards

If you go to a Brazilian restaurant or eat a Brazilian friends home, there is a good chance that these garlicky greens will be somewhere in the spread.

Couve à Mineira are collard greens sautéed in butter and loads of garlic and this flavorful staple can be found on Brazilian dinner tables any night of the week. It is often served along side feijoada, but also pairs well with roast chicken, barbecue or a nice steak.

Of course, you do not have to be from the Amazon to enjoy these delicious collards. Living in the south, collard greens are staple here too and if you are looking for a simple way to create a batch of addictively delicious collards then I would highly recommend making them this way.

Let’s get started…

Begin by washing all of your collard leaves well. Pat them dry with paper towels and use a sharp knife to remove the stems.

Roll the leaves up like a burrito and slice into thin slices. I like to make slices that are around 1/2″ thick similar to fettuccini noodles, but you can always go a little thick or thinner depending on the texture you prefer.

Once all of the collards have been thinly sliced, place a large skillet over medium heat and add 2 tablespoons of a good olive oil and 2 tablespoons of butter.

Once the butter has melted, add 6 cloves of finely minced garlic and cook for about 90 seconds. Keep the garlic moving while it cooks and as soon as it becomes very fragrant, add the collards.

Give the collards a good toss until they are all coated in the garlic butter and cook for about 5 minutes.

The collards should be bright green and slightly wilted. They have a great texture after a quick 5 minutes sauté.

Collards are often boiled, but they can become slimy when cooked this way. Sautéing them makes them tender without letting them become overly broken down and this is my favorite way to enjoy these healthy greens.

Couve à mineira is the only way to enjoy collard greens in my most humble opinion. They are ready in minutes, the texture is wonderful and who doesn’t love garlic butter?

Ingredients

  • 1 large bunch of collard greens
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 6 cloves of garlic, finely minced
  • salt and black pepper

Instructions

  • Wash the collard greens, remove the stems and thinly slice the leaves
  • Place a large skillet over medium heat
  • Add 2 tablespoons of olive oil and 2 tablespoons of butter into the skillet and once the butter has melted, add 6 cloves of minced garlic
  • Cook the garlic for about 90 seconds while stirring consistently
  • Add the thinly sliced collard greens and cook for about 5 minutes
  • Season with salt and black pepper and enjoy!
