Chocolate Peanut Butter Chia Parfait

Chocolate and peanut butter are a match made in heaven, but these two besties are usually found in dishes that require a little restraint.

Our chocolate layer is a rich and creamy chocolate chia pudding made with only nutritious ingredients and no added or artificial sweeteners and our peanut butter layer is a simple, but addictive layer of peanut butter and greek yogurt.

You get all of the nostalgic chocolate and peanut butter vibes in a healthy breakfast that you can feel good about enjoying morning after morning.

Let’s get started…

Begin by making the chocolate chia pudding layer. It will need to chill for a minimum of 2 hours (overnight is even better).

You can hand whisk or toss everything in a food processor to combine 1/2 cup of chia seeds with 2 cups of unsweetened almond milk, 2 tablespoons of cocoa powder, 2 tablespoons of pure maple syrup and 1/2 teaspoon of vanilla extract.

Transfer the mixture into an airtight container and chill.

Once your chocolate chia pudding is thick and creamy, whisk 1/3 cup of creamy peanut butter into 2 cups of vanilla greek yogurt until smooth and grab some granola… it’s time to assemble.

There is no wrong way to assemble a parfait, so layer as the spirit leads.

A little peanut butter yogurt… a little chocolate chia pudding… a little more yogurt…. some granola and maybe a little chopped chocolate to finish things off right. Do what feels right and your parfait will be fabulous.

The combination of the rich chocolate chia pudding and that creamy peanut butter yogurt is just plain delicious and the fact that there is no added or artificial sweeteners in this parfait is kind of tough to believe.

This nutritious breakfast that tastes more like a dessert is actually a high protein meal full of vitamins, minerals, fiber and antioxidants and I love that.

Ingredients

Chocolate Chia Pudding

  • 1/2 cup of chia seeds
  • 2 cups of unsweetened vanilla almond milk
  • 2 tablespoons of natural unsweetened cocoa powder
  • 2 tablespoons of pure maple syrup
  • 1/2 teaspoon of pure vanilla extract

Peanut Butter Yogurt

  • 2 cups of vanilla greek yogurt
  • 1/3 cup of creamy peanut butter

Assembly

  • granola or peanuts (optional garnish)
  • chocolate shavings (optional garnish)

Instructions

  • Combine 1/2 cup of chia seeds with 2 cups of unsweetened almond milk, 2 tablespoons of cocoa powder, 2 tablespoons of pure maple syrup and 1/2 teaspoon of vanilla extract in an airtight container and chill for 4 hours or overnight 
  • Whisk 1/3 cup of smooth peanut butter into 2 cups of greek yogurt until fully combined 
  • Once the chocolate chia is set, layer into 4 small glasses and garnish with salted peanuts, granola or chopped chocolate (optional)
