Pineapple Coconut Chia Parfait

Pineapple and coconut are a classic combination, but you do not need to wait until after 5 to enjoy them in a frozen drink with one of those little umbrellas. You can make this delicious parfait with layers of coconut chia pudding and pineapple yogurt and enjoy those flavors along with plenty of health benefits for breakfast every morning of the week.

Chia seeds are so nutritious! They are high in fiber and omega-3 fatty acids and a wonderful source of plant protein. These wonderful seeds along with almond milk, coconut, greek yogurt and pineapple create a flavorful parfait that is packed with vitamins, minerals and antioxidants and I can’t think of a better way to start my day.

Let’s get started…

These chia seed parfaits only require a small bit of “prep work”. The chia seeds have to hydrate and they actually get better the longer you let them soak. A minimum of 4 hours before you want to make your parfaits (overnight is even better!), combine 13.5 ounces of coconut milk, 1/2 cup of almond milk, a teaspoon of vanilla extract, 1/4 cup of shredded coconut and 1/2 cup of chia seeds in a large bowl, give them a good mix, cover and chill until they have thickened into a pudding like consistency.  

Once your coconut chia pudding is thick and ready to go, combine 2 cups of plain or vanilla greek yogurt with 1/2 cup of canned crushed pineapple that has been well drained. Be sure to use canned pineapple, because fresh pineapple will break down the casein in yogurt causing it to taste bitter. Using pineapple that has been canned in water or cooking fresh pineapple, will prevent this from happening.

All there is left to do is to layer your parfaits. I like to begin by dividing the coconut chia pudding between 4 small glasses or meal prep containers and then top with the pineapple yogurt. I also add a little extra pineapple with some granola for added texture.

These chia parfaits are wonderful! They have bright, cheerful, tropical flavors that make me excited to grab breakfast every morning and with all of their health benefits, I feel great about beginning each day with one and so will you!

Ingredients

Coconut Chia Pudding

  • 13.5 ounces of coconut milk
  • 1/2 cup of unsweetened almond milk (vanilla or plain)
  • 1 teaspoon of vanilla extract
  • 1/4 cup of shredded coconut (sweetened or unsweetened)
  • 1/2 cup of chia seeds

Pineapple Yogurt

  • 2 cups of greek yogurt (vanilla or plain)
  • 1/2 cup of crushed pineapple, canned in water, drained

Garnished

  • granola
  • additional crushed pineapple
  • additional shredded coconut

Instructions

  • Combine 13.5 ounces of coconut milk, 1/2 cup of almond milk, 1 teaspoon of vanilla extract, 1/4 cup of shredded coconut and 1/2 cup of chia seeds in a bowl, cover and chill for 4 hours or overnight 
  • When ready to assemble the parfaits, mix 1/2 cup of canned crushed pineapple into 2 cups of greek yogurt 
  • Alternate layers of coconut chia pudding and pineapple yogurt and garnish with granola, shredded coconut or more pineapple
