These little guys so cute! Almost too cute to eat, but once you taste them, you won’t be able to stop. The chicken is shredded fine and dressed in a delicious barbecue sauce then we add a tangy cole slaw and place this in between soft, fluffy slider buns… this is my new favorite lunch.
This recipe will put together the basics of this slider. You can totally use your favorite barbecue sauce, cole slaw mix and slider buns, BUT if you want to make everything from scratch, I will give links to my sweet and spicy barbecue sauce, creamy cole slaw and soft, fluffy burger buns. However you decide to put these little guys together, you will love them!
Let’s get these sliders started…
Start by roasting the chicken. I have a great step-by-step recipe for baking beautifully crispy skinned chicken here – roast chicken. The short version is to place 2 bone-in skin-on chicken breasts onto a parchment lined baking sheet. Dry the skin with a paper towel and then season with a big pinch of garlic powder, onion powder, cumin, paprika, chili powder, salt ,pepper and dried parsley.
Bake the chicken at 425 degrees for 50-60 minutes or until the internal temperature reads 165 degrees.
Once it is baked, allow the chicken to cool for about 10 minutes before pulling the chicken off of the bone.
That crispy chicken skin is something else and it is not going to be used in our shredded BBQ chicken, so feel free to snack on it… or eat it all at once… its your life.
So… while the chicken is cooling, mix up your cole slaw. If you have a favorite cole slaw recipe, feel free to use it, but if you are looking for a creamy, tangy slaw recipe, I would love to introduce you to my very favorite cole slaw recipe.
Once the chicken is cool enough to work with, pull the meat off of the bone and place it into a food processor. Add about 1/4 cup of barbecue sauce in with the chicken and pulse until the chicken is fine and the barbecue sauce is fully incorporated. Add more barbecue sauce if you want/need to and if you are interested in whipping up your own homemade sweet and spicy barbecue sauce, may I suggest checking out my sweet and spicy barbecue sauce.
Now that your shredded barbecue chicken and cole slaw is ready, we can assemble our sliders!

Scoop some shredded barbecue chicken onto the bottom of each bun, top with cole slaw and get ready to eat more sliders than you usually do. The first time I made these, I put one on my plate, but I ended up going back for “one more” so many times, that now I just put 3 on my plate right from the get go to avoid future trips back into the kitchen…
These shredded barbecue chicken sliders are great from everything from a beach trip or a backyard BBQ to Wednesdays lunch. With just 2 chicken breasts and this fabulous burger bun recipe, you can make a whole platter of sliders to either share with friends or hold on to for the rest of the weeks lunches. So many options!

Shredded BBQ Sliders
Ingredients
- bone-in skin-on chicken breast (each breast will make approximately 6 sliders)
- 1 teaspoon seasoning, per breast (a combination of garlic powder, onion powder, chili powder, paprika, cumin, dried parsley, salt and black pepper)
- cole slaw
- barbecue sauce
- slicer buns
Instructions
- Preheat your oven to 425 degrees
- Place bone-in skin-on chicken breasts onto a parchment lined baking sheet
- Pat the chicken dry with paper towels and season
- Bake in a 425 degree oven for 50-60 minutes or until the skin is crispy and the internal temperature reaches 165 degrees
- Carefully pull the chicken meat from the bone and place it into the food processor
- Add 1/4 cup of barbecue sauce (per breast) and pulse until the texture is fine and the barbecue sauce is mixed in
- Assemble sliders by cutting the buns in half, adding a layer of shredded barbecue chicken, a layer of cole slaw and topping with the other half of the bun
- Serve with some chips or fries and enjoy!
