Quick breads are great. They are super easy to make… mix, bake, done… and they can fill the job for everything from breakfast to dessert. While banana bread gets most of the attention, there are so many options when it comes to flavors of quick bread! From zucchini and pumpkin bread to my favorite pulp bread and today’s spiced pear quick bread, the options are endless and delicious.
Let’s get started…
As long as you have some pears on hand, I bet you have everything else you need to bring this quick bread together!
Begin by whisking 1/2 cup of plain greek yogurt with 1/2 cup of whole milk, a large egg, 1/3 cup of vegetable oil, 3/4 cup of brown sugar, 1/4 cup of granulated sugar, a teaspoon of pure vanilla extract and an optional 1/2 teaspoon of almond extract in a large bowl until everything is well combined.
Fold in 2 cups of all purpose flour, a teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger and 1/4 teaspoon of cloves until mostly incorporated and then grab 4 or 5 pears…
Peel your pears and run them over a large grater. I have found that grating the pears gives a much better result than dicing them. The grated pears tend to remain more evenly distributed throughout the loaf helping both the flavors and textures.
When you grate the pears, you will notice a lot of liquid comes off of them too. Its totally ok to add some of this liquid! I usually just loosely pick up the grated pear and any liquid that comes along is invited to stay. Discard the peel, seeds, stem and the liquid that stays behind on your grating surface.
Fold the grated pears into the batter and then transfer the batter into a generously greased and parchment lined loaf pan.
Bake the loaf in a 350 degree oven for 55-60 minutes. Keep an eye on the loaf around the 40 minute mark and if it begins to get too brown, loosely cover it with foil for the end of the baking time.
The loaf is ready to come out when the middle feels set to a light touch and a toothpick will come out of the center clean. If you gently shake the loaf pan and anything wobbles, let it bake more. This quick bread is very moist and needs time to bake fully before you remove it from the oven or the middle will be raw and will collapse as it cools.
Once it is fully baked, let it cool for 15 minutes or so in the loaf pan and then use the parchment paper to carefully transfer the loaf out of the pan and onto a cooling rack.
Now to me, this spiced pear quick bread is pretty perfect as is, but if you want to add a little glaze then whisk 1-2 teaspoons of milk into a cup of sifted confectioners sugar and maybe add a pinch of cinnamon in there too.
This spiced pear quick bread is so delicious. Greek yogurt, vegetable oil and of course the grated pears add wonderful moisture to this quick bread and the brown sugar, vanilla and almond extracts and those warm spices help create a fabulous flavor throughout the entire loaf.
If you have extra pears on hand or are just looking for something delicious that includes pears then you should definitely give this spiced pear quick bread a try. It is just perfect with coffee as an easy breakfast or with a cup of tea as an afternoon treat. You’ll love it!
