Bananas are amazing. They are cheap, you can find them everywhere and they are full of fiber, potassium and myriad of vitamins.
They are also super versatile being used in banana breads, smoothies, cookies and this fabulously creamy banana chia pudding. If you have any extra ripe bananas hanging around your kitchen, but do not feel like making them into a dessert then you should give this twist on chia pudding a try! You are going to love it…
Let’s get started…
Like all of my other chia pudding recipes, this one comes together very quick, but it does require some hydrating time. It can be ready in about 4 hours, but soaking overnight will give you the best result in both texture and nutritional benefits.
In a large bowl, mash 2 large ripe bananas until smooth. Add 2 1/2 cups of your favorite milk (I love using unsweetened vanilla almond milk), a teaspoon of pure vanilla extract, 1/2 cup of chia seeds and 1-2 tablespoons of pure maple syrup, if you prefer a sweeter pudding.
Mix until everything is completely combined, cover the bowl tightly and chill until fully hydrated.
Once the banana chia pudding is fully hydrated and has a thick pudding like texture, it is time to assemble our dishes.
You can eat it straight out of the bowl at this point or divide the pudding between 4 small bowls or meal prep containers and garnish with a dollop of vanilla greek yogurt, some fresh sliced bananas and a sprinkle of chocolate granola.

Banana Chia Pudding
- 2 large overly ripe bananas, mashed smooth
- 2 1/2 cups of your favorite milk (I use vanilla unsweetened almond milk)
- 1 teaspoon of pure vanilla extract
- 1/2 cup of chia seeds
- 1-2 tablespoons of pure maple syrup (optional)
Garnishes
- vanilla greek yogurt
- granola
- bananas, sliced
Instructions
- Mash 2 large overly ripe bananas until smooth in a large bowl
- Add 2 1/2 cups of unsweetened vanilla almond milk, 1 teaspoon of pure vanilla extract, 1/2 cup of chia seeds and 1-2 tablespoons of pure vanilla syrup (if a sweeter flavor is desired) and mix until everything is completely combined
- Cover the bowl tightly and chill for a minimum of 4 hours (overnight is best)
- Divide between small bowls and garnish with a dollop of greek yogurt, some sliced banana and granola
