
I love oatmeal cookies… correction, I love MY oatmeal cookies and I have some good ones on this blog. From my classic oatmeal chocolate chip to these toffee chai oatmeal cookies and of course these cherry pecan chocolate oatmeal cookies… a great oatmeal cookie is hard to beat.
And while I already have all of these delicious options, I am happy to say that I am adding yet another fabulous oatmeal cookie recipe today.
These candied apple oatmeal cookies are chewy, gooey and packed with oats, tender apples, warm spices and heath candy bar bits. All of the flavors of candied apples inside an amazing oatmeal cookie. Sounds perfect, right?
Let’s get started…

Begin by whisking 8 tablespoons of softened butter with 3/4 cup of brown sugar, 1 large egg and 1 teaspoon of vanilla extract until fully combined.
Fold in 1 1/2 cups of all purpose flour, 1 1/2 cups of old fashioned oats, 1 teaspoon of ground cinnamon, 1/2 teaspoon of apple pie spice (or pumpkin spice or chai spice), 1/2 teaspoon of salt and 1/2 teaspoon of baking soda until mostly combined.

I say mostly combined, because we still have to fold in 3/4 cup of diced apples and 1/2 cup of roughly chopped heath bar… aka the good stuff.
Once everything is evenly distributed, drop evenly sized portions onto parchment lined baking sheets leaving 2 inches between each portion to allow room for spreading.

Bake the cookies in a 350 degree oven for about 10 minutes or until the edges are golden brown and the centers are just set.
Let the cookies cool on a cooling rack and maybe give them a sprinkle of course sugar or flaky sea salt.

These cookies are incredible. Sweet little apples, chocolate, toffee, warm spices, chewy oats… they are absolutely fabulous and if you love apples and a great oatmeal cookie… bake these!
Candied Apple Oatmeal Cookies
Ingredients
- 1 1/2 cups of old fashioned oats
- 1 1/2 cups of all purpose flour
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of apple pie, pumpkin or chai spice blend
- 1/2 teaspoon of salt
- 1/2 teaspoon of baking soda
- 8 tablespoons of butter, softened
- 1 large egg
- 3/4 cup of brown sugar
- 1 teaspoon of pure vanilla extract
- 3/4 cup of apples, diced small
- 1/2 cup of heath candy bar, roughly chopped
Instructions
- Preheat your oven to 350 degrees and line 2 baking sheets with parchment paper
- In a large bowl, whisk 8 tablespoons of softened butter with 3/4 cup of brown sugar, a large egg and a teaspoon of pure vanilla extract until combined
- Add 1 1/2 cups of all purpose flour, 1 1/2 cups of old fashioned oats, 1 teaspoon of ground cinnamon, 1/2 teaspoon of apple pie spice, 1/2 teaspoon of salt and 1/2 teaspoon of baking soda and mix until mostly combined
- Add 3/4 cup of diced apples and 1/2 cup of roughly chopped heat candy bar and mix until evenly distributed
- Place evenly sized portions of cookie dough onto parchment lined baking sheets leaving 2 inches in between each
- Bake in a 350 degree oven for about 10 minutes or until the edges are golden brown and the middles are lightly set
- Let the cookies cool until firm on cooling racks
- Store leftovers in an airtight container at room temperature for up to 4 days
