
This gorgeous red velvet skillet cookie is ready to become the base for so many beautiful birthday, anniversary, Valentines Day or halloween desserts. Whether you add white chocolate or dark chocolate chips, a big scoop of vanilla extract, some roasted berries or cute decorations, this skillet cookie recipe makes a great addition to your baking repertoire.
Let’s get started…

Begin by whisking 1/2 cup of granulated sugar and 1/2 cup of brown sugar into 1/2 cup of softened butter.
Add 1 large egg, 1 large egg yolk, 1 teaspoon of pure vanilla extract and 2 teaspoons of red food coloring and whisk vigorously until everything is fully combined.
Notes: If you have gel food coloring, you should only need 1 teaspoon here and if you want to guarantee a deeper, richer red color, I love adding 1-2 drops of black food coloring. This is totally optional though!

Add 1 1/2 cups of all purpose flour, 1 1/2 tablespoons of natural unsweetened or dark cocoa powder, 3/4 teaspoon of baking powder and 1/2 teaspoon of salt and mix until everything is just combined.
If you want to add chocolate chips, add 1/2 – 3/4 cup and fold them in.

Spread the cookie dough into a greased 9″-10″ cast iron skillet and bake in a 350 degree oven for about 20 minutes or until the edges are set.

Ingredients
- 1/2 cup of butter, softened
- 1/2 cup of granulated sugar
- 1/2 cup of brown sugar, packed
- 1 large egg
- 1 large egg yolk
- 1 teaspoon of pure vanilla extract
- 2 teaspoons of red food coloring (or 1 teaspoon of red food gel coloring)
- 1-2 drops of black food coloring (optional - for a deeper red color)
- 1 1/2 cups of all purpose flour
- 1 1/2 tablespoons of cocoa powder (natural or dark)
- 3/4 teaspoon of baking powder
- 1/2 teaspoon of salt
Instructions
- Preheat your oven to 350° and grease the interior of a 9-10” cast iron skillet
- In a large bowl, combine 1/2 cup of softened butter with 1/2 cup of granulated sugar and 1/2 cup of brown sugar until creamy
- Whisk in 1 large egg plus 1 large egg yolk, 1 teaspoon of pure vanilla extract, 2 teaspoons of red food coloring and an optional 1-2 drops of black food coloring until completely combined
- Add 1 1/2 cups of all purpose flour, 1 1/2 tablespoons of natural unsweetened cocoa powder, 3/4 teaspoon of baking powder and 1/2 teaspoon of salt and mix until just combined
- Spread evenly into the greased cast iron skillet
- Bake in a 350° oven for about 20 minutes or until the edges are set and the top of the cookie looks set
- Garnish with vanilla ice cream or chocolate shavings
