Mascarpone Glaze

One of the most important decisions you have to make when baking up cakes, cupcakes, doughnuts and cookies is what you are going to dress them in. Maybe you want something rich and decadent like my chocolate espresso cream frosting or maybe something super light and airy like my brown sugar whipped cream…. or maybe you want something a little more creamy and luxurious like this mascarpone glaze.

This glaze is simple to make and just perfect for dunking cookies and doughnuts into or as a creamy fruit dip for some fresh, juicy strawberries and tart apples. With only four ingredients and about 5 minutes of your time, you can have a bowl full of deliciously creamy mascarpone glaze.

Let’s get started…

Begin by allowing 4 ounces of mascarpone (or cream cheese) to come to room temperature. You will also need 1/2 cup of confectioners sugar, 2 teaspoons of vanilla extract and 2-5 tablespoons of whole milk.

The reason my recipe calls for anywhere between 2-5 tablespoons of whole milk is that this glaze can be made thick, creamy and more of a spreadable consistency or it can be made in a thinner more pourable consistency. It’s really customizable and although I am using vanilla extract today, you can use citrus, rum, almond or any extract you love to make this mascarpone glaze into something uniquely yours.

Combine 4 ounces of room temperature mascarpone with 1/2 cup of confectioners sugar and 2 teaspoons of vanilla extract in a medium bowl. Start by adding 2 tablespoons of whole milk and whisking vigorously until smooth. You can use a stiff whisk and a strong arm, an electric hand mixer or stand mixer to do this.

If you prefer your glaze to be thinner, add another tablespoon or so of the whole milk and whisk to combine.

This glaze is the best. Its smooth, creamy and has a great balance of sweetness and tanginess that I absolutely love and I know that you will too.

Ingredients

  • 4 ounces of mascarpone (or cream cheese), room temperature

  • 2 teaspoons of vanilla extract
  • 2-5 tablespoons of whole milk

Instructions

  • Combine 4 ounces of room temperature mascarpone with 2 teaspoons of vanilla extract and 2 tablespoons of whole milk in a medium bowl and mix until smooth and creamy
  • Add 1/2 cup of confectioners sugar 
  • Mix until fully incorporated 
  • Add additional milk, 1 tablespoon at a time, until your desired consistency has developed 
  • Use immediately
