A creamy ranch dressing full of fresh poblanos, limes, cilantro, dill, chives and garlic. It is perfect to pair with your favorite latin inspired recipes as a taco sauce, taquito dip or chip dip or drizzled over a big salad. It is flavorful, fresh and just a little bit spicy. You are going to love this latin twist on a classic herby ranch dressing.
Let’s get it started…
Begin by gathering 1 large poblano pepper with the seeds and stem removed, 1/4 cup of plain Greek yogurt, 2 tablespoons of mayonnaise, 1/4 cup of buttermilk (or your favorite milk), 1/3 cup of fresh cilantro, 1 tablespoon of fresh lime juice, 1 teaspoon of garlic pasted, 1 teaspoon of dried dill, 1/2 teaspoon of dried chives, 1/2 teaspoon of dried parsley, 1/2 teaspoon of onion flakes, a pinch of salt and black pepper and 1-2 tablespoons of pickled jalapeños, which are optional, but highly recommended for a little bit of heat.
Add everything into a food processor or blender and blend until the poblanos are fine and the herbs are well distributed throughout the dressing.
Note: If you are looking for a thicker, more dip like consistency, add less buttermilk to start. You can always add more in later!
This dressing is so wonderful. Make sure you have a few veggie slices on hand to clean the food processor out, because you will not want to waste one bit of this deliciousness….
Creamy Poblano & Herb Ranch Dressing
Ingredients
- 1 large poblano pepper, seeds and stem removed
- 1/4 cup of plain Greek yogurt
- 2 tablespoons of mayonnaise
- 1/4 cup of buttermilk (or your favorite milk)
- 1/3 cup of fresh cilantro
- 1 tablespoon of fresh lime juice
- 1 teaspoon of garlic, minced or pasted
- 1 teaspoon of dried dill
- 1/2 teaspoon of dried chives
- 1/2 teaspoon of dried parsley
- 1/2 teaspoon of dried onion flakes
- a pinch of salt and black pepper
- 1-2 tablespoons of pickled jalapeño (optional)
Instructions
- Combine ingredients in a blender or food processor and blend until smooth and creamy
- Taste and add additional salt or black pepper, if necessary
- Add additional milk to thin, if necessary
- Use immediately or chill in an airtight container until ready to use
