If you are looking for a tangy, sweet and citrusy chicken marinade then you are going to love this honey lime chicken. It is just perfect over a bed of crisp greens, in a taco, burrito or rice bowl. It comes together in minutes and can be used as a marinade ahead of time or right away!
Let’s get started…
You will need 3 tablespoons of honey, 2 tablespoons of fresh lime juice, 2 tablespoons of soy sauce, 1 teaspoon of fresh lime zest and 1 finely minced or crushed clove of garlic. I use this amount over 1 boneless skinless chicken breast that has been halved horizontally and pounded evenly thin.
This recipe is easily doubled or tripled, so if you are making more chicken or just want a little extra sauce, simply multiply the ingredients.
Combine the ingredients in a shallow bowl and then submerge the pounded chicken in the marinade.
If you are preparing the chicken ahead of time, cover the bowl tightly with plastic wrap and chill the chicken in the refrigerator until you are ready to cook it.
If you are ready to cook now, just let the chicken sit in the marinade for a few minutes and then place a large skillet over medium heat.
Add the chicken into the warm skillet and cook on the first side for 3-4 minutes or until the underside is browned and caramelized. Watch the heat while your chicken cooks. The honey will begin caramelizing and can burn if you let the skillet become too hot.
Flip the chicken and pour the remaining marinade into the skillet. If it begins bubbling too rapidly, reduce the heat a bit until the chicken is cooked through and the marinade had reduced to a thick syrupy consistency.
Once the chicken is cooked through, transfer it onto a cutting board, slice it up and pour the reduced marinade over the chicken.
This honey lime chicken is just delicious! The chicken is flavorful and the marinade simmers into a thick, syrupy sauce that you are going to love. Whether it is spooned over some fluffy rice or drizzled over some steamed veggies or a soft tortilla, you are going to be a big fan of this fabulously sweet and tangy chicken.
