Roasted potatoes are such a versatile side dish and these roasted garlic herb new potatoes are crispy on the outside, tender on the inside and full of flavor. Since new potatoes skin is tender, they do not need to be peeled, so this simple side dish takes just minutes to get into the oven. Perfect for a busy day.

New potatoes are typically sold in 1 pound bags, so this recipe is based on 1 pound of potatoes, but it is easily double or tripled for bigger batches.
In addition to 1 pound of new potatoes, you will need 2 tablespoons of olive oil, 2 finely minced cloves of garlic, 2 teaspoons of seasoned salt, 1/4 teaspoon of black pepper and 2 tablespoons of your favorite fresh herbs finely chopped. Any herb works great with these potatoes!
Take a quick look at the potatoes to make sure they are clean, dry and free of eyes. Place them into a large bowl and add 2 tablespoons of olive oil, 2 finely minced cloves of garlic, 2 teaspoons of seasoned salt, 1/4 teaspoon of black pepper and 2 tablespoons of finely chopped herbs in with them.
Toss to combine and make sure that all of the potatoes are coated in oil and generously seasoned.
Transfer the seasoned potatoes into a small baking dish and cover the dish tightly with foil. Bake the potatoes in a 375 degree oven for 35 minutes.
Baking the potatoes covered in foil will help make them nicely tender. After 35 minutes, uncover the potatoes and increase the ovens heat to 450 degrees. Bake them for an additional 8-10 minutes or until the potatoes are fork tender with crispy skins.
If your baking dish is small enough that the potatoes are stacked on top of each other, gently toss them around occasionally to ensure that they all get the same amount of love during the baking process.

Roasted Garlic Herb New Potatoes
Ingredients
- 1 pound of new potatoes, washed and dried
- 2 tablespoons of olive oil
- 2 cloves of garlic, finely minced
- 2 teaspoons of seasoned salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of fresh herbs, finely chopped
- fresh parsley, finely chopped (garnish)
- flaky sea salt (garnish)
Instructions
- Preheat your oven to 375 degrees
- Add 1 pound of clean, dry new potatoes into a large bowl
- Drizzle 2 tablespoons of olive oil over the potatoes and add 2 cloves of finely minced garlic, 2 teaspoons of seasoned salt, 1/4 teaspoon of black pepper and about 2 tablespoons of finely chopped fresh herbs (parsley, rosemary, oregano, thyme or any combination)
- Toss until all of the potatoes are coated in olive oil and generously seasoned
- Transfer the potatoes into a small baking dish and cover tightly with foil
- Bake at 375 degrees for 35 minutes
- Uncover the dish and toss the potatoes around a bit
- Increase the oven temperature to 450 degrees and cook until the potatoes are fork tender (about 8 minutes)
- Serve garnished with fresh parsley and flaky sea salt
