Spicy Green Goddess Salad

It is no secret that I am a salad lover, but spicy food is up there on my list too, but when it comes to spicy food, I usually enjoy it in the form of something heavy… burritos, enchiladas, curry… you get the idea…

Today’s green goddess salad is the perfect way to enjoy those spicy flavors and creamy textures we all crave in a lighter, super healthy form.

A combination of cabbage, lettuce, green peppers, cucumbers, fresh herbs, green onions and jalapeños is finely chopped and tossed in a light and creamy spicy dressing. This salad is amazingly delicious and really hits the spot when you want something with a little bit of heat.

Let’s get started…

This salad is really easy to bring together. Start by finely chopping 1 cup of cabbage, 1 cup of leafy green lettuce, 1/2 of a small English cucumber, 1/2 green bell pepper, 3 spring onions, 1/3 cup of your favorite fresh herbs and 1 tablespoon of pickled jalapeños.

Combine everything in a bowl and now let’s make the creamy spicy dressing…

In a small blender or food processor, combine 1/4 cup plain Greek yogurt or crema, 1 large clove of garlic, 1 teaspoon of pickled jalapeño, 6-8 fronds of fresh dill, 1/2 teaspoon of dried chives, a handful of fresh cilantro and a pinch of salt and black pepper.

Blend until smooth and thin drizzle in enough olive oil to achieve your desired consistency.

Add some of the dressing, give the salad a good toss and then add the rest, if needed. I always add all of this dressing, but play with it and see what you like. If you want a little bit of cheese (and who doesn’t?) sprinkle your salad with a little grated parmesan and enjoy!

This spicy green goddess salad is fresh, crunchy, creamy and just a little spicy. It is great as a main course, but also makes a wonderful side salad to pair with soups and sandwiches or a flavorful appetizer to start a meal.

Ingredients

Spicy Green Goddess Salad (per serving)

  • 1 cup of cabbage, finely chopped
  • 1 cup of leafy green lettuce, finely chopped
  • 1/2 of a small English cucumber, finely chopped
  • 1/2 of a green pepper, finely chopped
  • 3 green onions, finely chopped
  • 1/3 cup of fresh herbs, finely chopped
  • 1 tablespoon of pickled jalapeños
  • parmesan, grated (optional)

Spicy Green Goddess Dressing

  • 1/4 cup of plain Greek yogurt or crema
  • 1 large garlic clove
  • 1 teaspoon of pickled jalapeño
  • 6-8 fronds of fresh dill
  • a handful of fresh cilantro
  • 1/2 teaspoon of dried chives
  • a pinch of salt and black pepper
  • olive oil (for thinning the dressing)

Instructions

  • Combine 1/4 cup Greek yogurt or crema, 1 large clove of garlic, 1 teaspoon of pickled jalapeño, 6-8 fresh dill fronds, 1/2 teaspoon of dried chives and a handful of fresh cilantro into a blender and blend until smooth
  • Add a pinch of salt and black pepper and a good drizzle of olive oil and pulse to incorporate 
  • Continue drizzling olive oil until your desired consistency is reached and set aside
  • Combine 1 cup of finely chopped cabbage, 1 cup of finely chopped leafy green lettuce, 1/2 of a finely chopped English cucumber, 1/2 finely chopped green bell pepper, 3 finely chopped spring onions, 1/3 cup of finely chopped fresh herbs and 1 tablespoon of pickled jalapeños in a large bowl
  • Add half of the dressing and toss to combine
  • Add additional dressing and grated parmesan, if desired
