Baked Egg Bites

Starbucks sells these egg bites that are very popular. They seem like a good choice… eggs, meat and cheese…, but unfortunately, they contain added stabilizers, preservatives and flavoring and they cost an average of $5.49. They are such a great idea, but they could use a little tweaking to make them more healthy and budget friendly, so let’s make them at home…

Begin by lightly spraying a 12 cup muffin tin with your favorite non-stick baking spray.

Press a slice of deli meat into each cavity. I am using turkey today, but you can also use ham, roast beef, chicken, salami or any relatively thinly sliced deli meat.

Crack an egg into each cavity and season with salt and black pepper. I am using large eggs today and they were as big as I would go unless you are using an extra deep muffin tin.

If you want to add cheese, sprinkle some over each egg.

Bake in a 350 degree oven for 12-16 minutes depending on how set you want your yolk to be.

If I am having these with potatoes or some sort of bread, I like to pull them out at the 12 minutes mark, so the yolks are still a little soft. If I am eating these on their own, I will bake them for 15-16 minutes, so they are set like a hard boiled egg.

Pop them out of the muffin tin and let them cool before you wrap them up. I store them in small glass meal prep containers and recommend adding a sheet of paper towel under them to soak up any residual moisture that the eggs can release.

With the average egg price of $1.99 a dozen and $4 for 8 ounces of turkey deli meat, this means each serving would cost roughly just .92 cents (plus a couple more cents if you add cheese) when you make these at home!

With 28 grams of protein in each serving (6 grams per slice of turkey, 6 grams per egg and 2 grams per tablespoon of shredded cheese x 2 egg bites) and only about 250 calories, these baked egg bites are one of the best breakfasts in my meal prepping tool box.

These little bites are tasty, nutritious, high in protein, cost effective and really couldn’t be easier to make, what more could we ask for out of a breakfast meal prep…

Ingredients

  • 12 large eggs
  • 12 slices of deli meat (turkey, chicken, ham, roast beef or salami)
  • salt and black pepper
  • shredded cheese (optional)

Instructions

  • Preheat your oven to 350 degrees
  • Lightly spray a 12 cup muffin tin with non-stick baking spray
  • Press a slice of deli meat into each cavity and crack en egg over each slice
  • Season with salt and black pepper (optionally, add shredded cheese)
  • Bake in a 350 degree oven for 12-16 minutes depending on how set you prefer your yolk
  • Let the egg bites cool and then chill them in an airtight container until you are ready to enjoy
