Baked Oats with Bananas

If you are just getting into meal prepping or already an Olympic level meal prepper, I cannot wait to share this baked oats recipe with you.

It is a wonderful source of protein, fiber and generally nutritious ingredients, but even more importantly… to me… it is absolutely delicious and a breakfast that I actually look forward to eating in the morning. I am not a huge fan of eating in the morning, but I understand the value of starting our days with a great meal, so having something that I know I will enjoy all ready to go is important for me.

These baked oats are as easy as combining oats, almond milk, flax and chia seeds, eggs, some spices, maple syrup and bananas in a big bowl and then baking them in your favorite dishes or meal prep containers. Sometimes I toss a few mini chocolate chips in there too… ok I do it every time, but there really are optional as the oats come out fluffy, moist and perfectly sweet… even without any processed sugar going into the mix.

If you are looking for a wonderful breakfast to prep once and enjoy all week then you need to give these baked oats a try!

Let’s get started…

In a large bowl, combine 2 1/4 cups of your favorite milk, 2 large eggs, a teaspoon of pure vanilla extract and 1/3 cup of pure maple syrup or honey.

Add 2 1/2 cups of old fashioned oats along with 1/2 cup of ground flax seeds, 1/4 cup of chia seeds, 2 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg (optional), 1 teaspoon of baking powder and 3/4 teaspoon of salt and mix until fully combined.

Fold in 3 large diced bananas and 1/2 cup of mini chocolate chips until evenly distributed.

I love the texture that diced bananas give to these baked oats, but if you prefer to mash them that is perfectly fine too!

Divide the mixture between 4-5 greased oven safe containers and baked in a 350 degree oven for 35-40 minutes. Your baked oaks are ready when the top feels set and springy to a light touch. Transfer them onto a heat proof surface and allow them to cool before covering and chilling.

If you have any extra bananas or chocolate chips on hand, add a few over the top of your baked oats when you first pull them out of the oven.

These oats are moist, tender and full of a wonderful flavors and textures. The oats maintain a little bit of bite, the diced bananas get all tender and the chocolate chips melt down creating the perfect combination of textures. The oats are warmly spiced and perfectly sweet.

These baked oats make a wonderful breakfast both when they are fresh out of the oven or 3 days later after a minutes in the microwave. They make a great meal prep breakfast that will fill you with protein, fiber, vitamins and antioxidants for the rest of the morning.

Ingredients

  • Bake in a 350 degree oven for 35-40 minutes or until the oats feel set and springy to a light touch
  • Allow the oats to cool for about 15 minutes before covering and chilling
  • Microwave uncovered for 60-90 seconds to reheat
