Basil Seed Pudding

If you have been here for a while, it will be no surprise to you that I love chia seeds. I make chia pudding for breakfast regularly, keep chia jam in my fridge often and love adding them into my baked oats. They are a regular part of my cooking plans and have been for years, but I have recently added a new little seed to my pantry and they are giving chia seeds a run for their money…

Basil seeds are similar to chia seeds, but they do have their own unique characteristics…


Chia Seeds vs Basil Seeds

      • Consistency – chia seeds take longer to rehydrate and develop a thick, hearty pudding while basil seeds rehydrate much quicker and have a creamier texture
      • Nutrition – chia seeds have more omega-3’s and basil seeds contain more iron and calcium. Both are great sources of fiber
      • Availability – chia seeds are more popular in the states, so they are easier to find and tend to be a little more cost effective too, but basil seeds are becoming very easy to order online making them pretty easy to keep on hand

They are both great, both nutritionally beneficial and easy to keep in your pantry, but one place that basil seeds definitely pull ahead is the fact that you can make yourself a basil seed pudding for breakfast this morning… like now and there is only about 20 minutes of waiting time, so mix everything together and by the time you get dressed and brush your teeth, your basil seed pudding will be ready to enjoy.

For a single serving, whisk 1/2 cup Greek yogurt with 1/2 cup of your favorite milk (I usually use vanilla unsweetened almond milk), a tablespoon of pure maple syrup, a splash of vanilla extract and 1-2 tablespoons of basil seeds.

Note: If you want a looser pudding, just add 1 tablespoon of basil seeds, but if you prefer a thicker, creamier pudding then I would add 2 tablespoons.

Set the mixture aside for about 5 minutes and then give it another good mix to ensure all of the basil seeds are fully incorporated. Let the mixture sit for 20 minutes before enjoying or if you are making this in advance, chill the pudding in an airtight container for up to 4 days.

I love topping my basil seed pudding with granola and fresh berries, but a spoon of peanut butter or some chocolate chips work perfectly too.

This basil seed pudding is so creamy and inviting. It is perfectly sweet with an almost whipped cream consistency that I have been loving.

Ingredients

  • 1/2 cup of Greek yogurt
  • 1/2 cup of your favorite milk
  • 1 tablespoon of pure maple syrup
  • a splash of pure vanilla extract
  • 1-2 tablespoons of basil seeds

Instructions

  • Whisk everything together until smooth - use 1 tablespoon of basil seeds for a pudding with a thinner consistency and 2 tablespoons for a thicker pudding
  • Set aside for 5 minutes and then whisk again to ensure all of the basil seeds are incorporated
  • Rest for 20 minutes or chill in an airtight container for up for 4 days
  • Enjoy with granola and fresh berries
