One of my very favorite fast food meals is a burrito bowl from Chipotle. I am very much obsessed with mexican food and there is something so wonderful about the combination of rice, beans, a well seasoned protein and some fabulous taco toppings. It really hits the spot when I am craving latin inspired comfort food… which is quite often.
Not only is this burrito bowl incredibly delicious, but making burrito bowls is a great way to create something amazing with left over rice, chicken, beef or tofu and your favorite taco toppings. Let’s get started…
Your basic burrito bowl ingredients are rice, beans, your favorite taco toppings and a protein. Today, I am making everything from scratch, but when you officially add burrito bowls to your meal option list, many of these ingredients can be easily swapped out with left overs or your favorite store bought version.
Begin by making some delicious ground beef. This is my go to ground beef preparation for tacos, burritos and many other dishes that require flavorful ground beef. Add 1/2 lbs of ground beef into a skillet over medium heat. Add a crushed of grated clove of garlic, a tablespoon of tomato paste and some of your favorite taco or steak seasoning. I love Lawry’s steak seasoning in this ground beef, but feel free to use your favorite seasoning blend.
Once the meat has browned and is cooked through. Remove the skillet from the heat and set aside for now. This recipe is simple, but delicious and if you want a little heat, feel free to add some chili powder, cayenne pepper or crushed red pepper flakes.
Cook up 2 cups of your favorite rice according to the manufacturers instructions and while the rice is cooking, gather your toppings.
Salsa is a classic topping for burrito bowls and there are some really great salsas out there, but if you want to make a batch of my pico de gallo, I highly recommend its fresh, chunky goodness with this beef burrito bowl. To make the pico de gallo, finely chop 1 large vine ripened tomato, half of a small red onion and a small finely diced jalapeño. Transfer into a large bowl and add 1/4 cup of finely chopped fresh cilantro, a pinch of salt and black pepper. Squeeze the juice of lime into the bowl and mix well.
Take a quick taste test and add additional salt or black pepper, if necessary and then set aside.
Now that everything that needs to be cooked is ready to go, rinse some sweet corn and black beans, finely shred a little romaine lettuce and gather some sour cream, tortillas and your favorite cheese.
It’s time to assemble…
Technically, you can assemble your burrito bowl however the spirit leads, but I like starting with a base of rice and shredded lettuce. Add the ground beef, some sweet corn and black beans and then spoon some salsa or pico de gallo along side everything.
I like to fold a few flour tortillas on the side and add some crumbled queso fresco or shredded sharp cheddar, a big dollop of sour cream and lime wedges to finish everything off in the best way.
This beef burrito bowl is full of great textures and fun, festive flavors. It is a wonderfully simple weeknight meal and one of my favorite comfort food choices.
Burrito bowls are easily made vegan, vegetarian and gluten-free and are customizable in so many ways. I love swapping the white rice for brown rice, using left over chicken or turkey instead of beef and using virtually any chopped veggies or salsa you have chilling in your refrigerator.

Beef Burrito Bowl
Ingredients
Ground beef
- 8 ounces of ground beef
- 1 clove of garlic, crushed
- 1 tablespoon of tomato paste
- 1 teaspoon of steak or taco seasoning
Pico de gallo
- 1 large vine ripened tomato, finely diced
- 1/2 of a small red onion, finely diced
- 1 small jalapeño, seeds removed, finely diced
- 1/4 cup of fresh cilantro, finely chopped
- a lime
- salt and black pepper
Assembly
- 2 cups of rice, cooked
- 2 cups of romaine lettuce, finely shredded
- black beans, rinsed
- sweet corn, rinsed
- sour cream
- queso fresco or sharp cheddar
- lime wedges
- tortillas (optional)
Instructions
Make the ground beef...
- Add 8 ounces of ground beef into a medium skillet over medium heat along with a crushed garlic clove, a teaspoon of taco or steak seasoning and a tablespoon of tomato paste
- Cook until browned and cooked through and then set aside
Make the pico de gallo...
- Combine diced tomato, red onion and jalapeño with finely chopped cilantro in a small bowl
- Add 1 tablespoon of fresh lime juice and a pinch of salt and black pepper and set aside for now
Assemble the bowls...
- Divide the cooked rice and shredded lettuce between 2 shallow bowls
- Top with ground beef, rinsed corn and black beans, pico de gallo and cheese
- Serve with flour tortillas, sour cream and lime wedges
