Breakfast Smashburgers

Good morning and welcome to another episode of our breakfast sandwich series! Today, we are making breakfast smashburgers and not only are they super easy, but they are a wonderful way to use up a little extra ground beef you may have on hand.

Last month, I started my “Eating Well on a Budget” series off with a focus on ground beef and these breakfast smashburgers would be a perfect budget friendly breakfast meal prep.

Let’s get started…

First, let’s talk about the bread situation. Today, I am making my breakfast smashburgers on my favorite honey wheat rolls, but feel free to use any soft bun that has enough structure to stand up to a burger.

Now for the actual smashburgers…

Place a golfball sized portion of ground beef (or any ground meat you prefer) onto a skillet over medium high heat. Place a small piece of parchment paper over the ball of ground beef and use a meat press or even a large flat bottomed water glass to smash the ground beef out nice and thin. Season generously with your favorite seasoning blend (I love Lawry’s seasoned salt for these burgers!) and let the beef cook until it forms a nice crisp crust on the bottom. Flip the smashburger, add a slice of your favorite cheese and let them cook just until the cheese is melted.

Once your burgers are ready to go, you can either transfer them directly onto the bottom bun of your chosen rolls or let them rest on a plate until you are ready to assemble.

Cook 1 egg per sandwich to your liking and just like that we are ready to assemble.

To assemble the breakfast sandwiches, add your smashburgers onto the bottom bun, top with an egg and then add a layer of baby greens, top bun and we are ready to eat… or wrap them up for later…

These breakfast smashburgers are fantastic and a breakfast sandwich with a melted cheese covered ground beef patty instead of bacon or sausage seems so much more juicy and satisfying to me. These burgers are great for lunches too!

Ingredients

  • ground beef
  • your favorite burger seasoning
  • eggs
  • cheese
  • baby greens
  • burger buns

Instructions

  • You will need a bun, a golfball sized portion of ground beef, 1 large egg and some cheese for each breakfast sandwich you want to make
  • Place a large skillet over medium high heat, place your ground beef into the skillet, cover with a small piece of parchment paper and use a meat press or large flat bottom glass to press the ground beef out very thin
  • Generously season the ground beef and let it cook undisturbed until the bottom forms a crisp crust
  • Flip the smashburger, add your favorite cheese and let the burger cook until the cheese melts and set the burgers aside for now
  • Place a skillet over medium heat, add your eggs and cook to your liking
  • Assemble the breakfast sandwiches by placing the smashburger onto the bottom bun, top with your egg, some baby greens and the top bun
  • Enjoy warm or let cool, wrap in parchment paper and chill in an airtight container until ready to enjoy!
