Cantaloupe Chia Pudding

Cantaloupes are a wonderful source of Vitamin C, fiber and potassium. They also contain zeaxanthin, which is an antioxidant with great eye health benefits. With their many health benefits and wonderful natural sweetness, these melons are a fabulous addition to todays chia pudding.

Let’s get started…

While chia pudding is super easy to bring together, it does require time. Chia seeds will start to become hydrated in as little as 30 minutes, but you will get the most nutritional benefits and best texture with 4 hours or an overnight soak. If you have the time, prep the pudding the night before you want to divide them up, garnish them and dig in.

Begin by blending about 2 cups of fresh cantaloupe in a blender or food processor. I usually use half of a large cantaloupe.

Once the cantaloupe has been blended fairly smooth, add it into a large bowl along with 1 1/2 cup of your favorite milk (I use unsweetened vanilla almond milk), a teaspoon of pure vanilla extract and 1/2 cup of chia seeds.

Cover the bowl and chill for 4 hours or overnight.

When the chia seeds are all hydrated and you have a thick pudding like texture, divide the chia pudding between 4 bowls or meal prep containers. I like to garnish these with a big dollop of vanilla greek yogurt, some granola and more cantaloupe, but the chia pudding really is delicious on its own.

Ingredients

Cantaloupe Chia Pudding

  • 2 cups of fresh cantaloupe (about 1/2 of a large cantaloupe)
  • 1 1/2 cups of your favorite milk (I use vanilla unsweetened almond milk)
  • 1 teaspoon of pure vanilla extract
  • 1/2 cup of chia seeds

Garnishes

  • vanilla greek yogurt
  • granola
  • fresh cantaloupe, sliced or diced

Instructions

  • Cut a large cantaloupe in half, discard the seeds and transfer the flesh of half of the melon into a blender
  • Blend the cantaloupe until smooth and transfer into a large bowl 
  • Add 1 1/2 cup of unsweetened vanilla almond milk, 1 teaspoon of pure vanilla extract and 1/2 cup of chia seeds and mix until everything is completely combined 
  • Cover the bowl tightly and chill for a minimum of 4 hours (overnight is best)
  • Divide between small bowls and garnish with a dollop of greek yogurt, some fresh cantaloupe and granola
