Chocolate Flaxseed Pudding

Flaxseeds are pretty cool. They are a wonderful source of fiber, protein and omega-3 fatty acids. Studies have found that flaxseeds can improve digestion, lower blood pressure, improve cholesterol and absorb toxins from our bodies.

These tiny little seeds contain many impressive health benefits, plus they can be used in many delicious ways. From a popular vegan egg replacement to a gluten-free thickener and a nutritionally beneficial addition to breading, granola and smoothies.

Yet another tasty way to enjoy flaxseeds is in this chocolate pudding! It is vegan, gluten-free and dairy-free with no processed ingredients, added sugar or cooking required. And while all of this is true, this pudding also happens to be delicious with a great texture and just the right amount of sweetness.

This pudding comes together super quick and requires only about 30 minutes of chilling to develop a great texture, but can also be chilled for a day or so in the refrigerator.

All you need to do is vigorously whisk 1 cup of almond milk (I use unsweetened vanilla, but use what you have on hand), 1 teaspoon of vanilla extract, 1 tablespoon of cocoa powder, 1/2 cup of ground flaxseeds and 1-2 tablespoons of maple syrup, depending on how sweet you prefer your pudding.

You can also add a little finely chopped chocolate into the pudding or use it to garnish the pudding before enjoying, if you love chocolate as much as I do. Its optional, but very highly recommended!

As soon as everything is fully combined, divide the mixture between 2 small bowls, cover the bowls tightly and chill the pudding in the refrigerator for 30 minutes before enjoying.

The flaxseeds quickly absorb all of the flavors of the chocolate, vanilla, maple syrup and almond milk transforming everything into a thick pudding with a uniquely delicious consistency.

Ingredients

  • 1 cup of almond milk
  • 1/2 cup of ground flaxseeds
  • 1 tablespoon of cocoa powder
  • 1 teaspoon of vanilla extract
  • 1-2 tablespoons of maple syrup (to taste)
  • dark chocolate, finely chopped (optional)

Instructions

  • Combine 1 cup of almond milk, 1 teaspoon of vanilla extract, 1 tablespoon of cocoa powder, 1/2 cup of ground flaxseed and 1-2 tablespoons of maple syrup (depending on how sweet you prefer your pudding) and whisk until all of the ingredients are fully combined)
  • Optionally, add some chopped dark chocolate into the mixture
  • Divide the mixture between two airtight bowls and chill for at least 30 minutes
  • Enjoy garnished with fresh fruit or finely chopped chocolate
