I don’t know about you, but sometimes I wake up in the mood for something light and refreshing and other times, I wake up in the mood for something rich and luxurious. These chocolate waffles are what I make when I am craving something a little extra, because they definitely are… extra.
With crisp edges, a moist, cake like interior and bold chocolate flavors, these chocolate waffles have Sunday morning written all over them and when you add some chocolate whipped cream and just the tiniest drizzle of maple syrup or dare I say chocolate sauce over the whole situation… things may get a little out of hand, but thats ok… it’s the weekend!
Let’s get started…
Begin by whisking 2 cups of all purpose flour, 1/3 cup of natural unsweetened cocoa powder, 2 teaspoons of espresso powder, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt in a small bowl and set it aside for now.
In a large bowl, whisk 2 cups of whole milk, 1/2 cup of olive oil, 3 large eggs, 1/3 cup of granulated sugar and 1 teaspoon of vanilla extract until everything is fully incorporated and pale in color.
Add the dry ingredients into the wet ingredients and mix until just combined.
Fold in 4 ounces of chopped chocolate and start preheating your waffle maker, because it is time to make some waffles…
Once your waffle maker is preheated, spray it generously with non-stick spray and add your batter. Most waffle makers have a little light on top that signifies when the waffles are fully cooked, but I like to leave them in just a tiny bit longer to allow the edges to crisp up a bit. Keep an eye on the waffles and as soon as they are ready, transfer them onto a plate and get ready to indulge in something fabulous…
The flavor of these chocolate waffles is boldly chocolate, but not overly sweet. Waffles are often too sweet and when you plan on adding maple syrup on top of that, it can be too much. I always top these waffles with chocolate whipped cream and a drizzle of chocolate sauce (my husband is a choco-holic and these were developed for him) and even with that, they are still perfectly sweet.
Now if you prefer your waffles to be more on the sweet side, then you can definitely add more granulated sugar into the batter, but I think they are perfect as is.
I cannot tell you how wonderful these chocolate waffles… there are just no words to describe how rich and luxurious they really are. Whether you are making them for a cozy weekend morning or a big brunch for friends or family, these chocolate waffles are bound to impress even the fanciest of chocolate connoisseurs.

Instructions

- In a large bowl, whisk 2 cups of whole milk, 1/2 cup of olive oil, 3 large eggs, 1/3 cup of granulated sugar and 1 teaspoon of vanilla extract until everything is fully incorporated and pale in color
- Combine the wet and dry ingredients and fold in 4 ounces of chopped chocolate
- Let the batter sit for 5-10 minutes while the waffle maker preheats
- Generously spray the preheated waffle maker with non-stick spray and then add the batter and cook until the edges are crisp
- Top with whipped cream, chocolate sauce or maple syrup
