Classic French Toast

I went to sleep last night knowing that I was going to make french toast for breakfast, so when the alarm clock went off this morning, I popped right out of bed… it’s funny how having the proper motivation helps…

Although most people know how to make french toast, a few simple adjustments to a recipe can make a huge difference when it comes to creating the best flavors and textures in this breakfast classic and this is how I make the best french toast in my own kitchen.

Let’s get started…

Begin by combining 3 large eggs, 3 egg yolks, 1/2 cup of half and half, 2 tablespoons of granulated sugar, 2 teaspoons of cinnamon, 1/4 teaspoon of nutmeg, a pinch of salt and 2 teaspoons of vanilla extract in a shallow bowl.

Whisk the ingredients until the eggs are completely broken down and everything is fully combined. This batter is enough to generously soak about 8 thick slices of french bread, which is my favorite bread to use for french toast, but you could also use 10-12 thinner slices of bread.

Place a wide skillet or flat griddle over medium heat and let it get a little warm. Add some butter or non-stick spray to grease the surface.

Working with one slice at a time, press the bread down into the egg mixture for about 30 seconds and then flip it to the other side and let it soak on that side for another 30 seconds or so. Use a fork or slotted spatula to transfer the soaked bread onto the warm, greased griddle.

Let the french toast cook for about 2 minutes on the first side and once the underside is golden brown, flip each piece and cook for another 2 minutes on the other side.

Transfer your golden brown french toast onto a plate, add some berries and maybe a dusting of confectioners sugar and breakfast is served…

This french toast is simply wonderful. It is warmly spiced with the cinnamon and nutmeg and perfectly sweet. The half and half and extra egg yolks create a beautifully creamy, custardy flavor to the bread and although the edges do become crisp as they cook, this french toast easily soaks up all of the maple syrup that you care to drizzle over your plate.

Ingredients

  • 3 large eggs
  • 3 egg yolks
  • 1/2 cup of half and half
  • 2 tablespoons of granulated sugar

  • 8-10 slices of your favorite bread
  • fresh fruit (garnish)
  • confectioners sugar (garnish)
  • maple syrup (optional)

Instructions

  • Combine 3 large eggs, 3 egg yolks, 1/2 cup of half and half, 2 tablespoons of granulated sugar, 2 teaspoons of cinnamon, 1/4 teaspoon of nutmeg, a pinch of salt and 2 teaspoons of vanilla extract in a shallow bowl and whisk until fully combined
  • Place a wide skillet or flat griddle over medium heat and grease with butter or non-stick spray
  • Soak the bread for about 30 seconds per side in the egg mixture and transfer onto the warm, greased griddle
  • Cook for about 2 minutes on the first side and once the underside is golden brown, flip the bread and cook for another 2 minutes or until both sides are golden brown and lightly caramelized
  • Transfer the french toast onto plates, top with fresh fruit and a dusting of confectioners sugar
  • Serve warm with maple syrup
