There is something super cozy about a mug of hot chocolate. It is warm, sweet and usually has a few marshmallows or some whipped cream involved. Whats not to love? …and if you happen to be avoiding dairy, you should not be deprived of this deliciously comforting drink.
This hot chocolate is made with almond milk, so no dairy involved, and it is easily made vegan with a simple vegan chocolate substitution. It is super creamy, rich and perfectly sweet.
Let’s get it started…
Begin by gathering 2 1/2 cups of unsweetened almond milk (I use unsweetened vanilla, but plain works too), 2 tablespoons of sugar (brown, granulated, raw, coconut or palm), 1/2 teaspoon of cornstarch, 1 tablespoon of cocoa powder, 1 teaspoon of vanilla extract and 4 ounces of chocolate (milk, dark or vegan).
Add 2 cups of the almond milk into a small saucepan and place it over medium heat. While the almond milk is warming up, combine the remaining 1/2 cup of almond milk with 1/2 teaspoon of cornstarch and 1 tablespoon of cocoa powder and whisk until smooth and then add 1 teaspoon of vanilla extract and 2 tablespoons of sugar in a small bowl.
As soon as the almond milk begins to simmer, whisk in the cornstarch mixture and simmer until it has thickened slightly.
Reduce the heat to low and add the chopped chocolate. Stir until the chocolate is melted and then divide it between two mugs.
Top the mugs with marshmallows or some whipped cream and enjoy the creamiest, most comforting hot chocolate ever. Although I do use milk for some recipes, I really prefer using almond milk in my hot chocolate for the lower calories and better flavor.

Instructions
- Add 2 cups of almond milk into a small saucepan and place over medium heat
- In a small bowl, combine 1/2 cup of almond milk with 1/2 teaspoon of cornstarch and 1 tablespoon of cocoa powder and whisk until smooth and then add 1 teaspoon of vanilla extract and 2 tablespoons of sugar
- As soon as the almond milk begins to simmer, reduce the heat to low and add the cornstarch mixture and whisk until completely incorporated
- Add 4 ounces of chopped chocolate and whisk over low heat until the chocolate is melted and the mixture has thickened slightly
- Serve garnished with whipped cream and shaved chocolate
