There is something special about chai spices. Whether they are in a warm drink, a rich dessert or these creamy oats, those warm spices are so comforting and inviting.
If you are not familiar with chai, it is a spice blend that is very popular in southern Asia and much appreciated in my kitchen too. A combination of cardamom, cinnamon, ginger, star anise, cloves, nutmeg and black pepper that creates a well balanced spice blend that is both sweet and mildly spicy. Adding these inviting flavors to a creamy bowl of oatmeal makes for a truly delicious breakfast that I know you will love.
Let’s get started…
Begin by gathering 2 cups of old fashioned oats, 3 1/2 cups of almond milk, 1/2 cup of heavy cream, 2-3 tablespoons of brown sugar (depending on how sweet you prefer your oatmeal to be), 1 teaspoon of ground cinnamon, 1/2 teaspoon of salt, 1/4 teaspoon of ground ginger, 1/4 teaspoon of all spice, 1/4 teaspoon of cloves, 1/4 teaspoon of nutmeg, 1/8 teaspoon of cardamom, a pinch of black pepper and 1 teaspoon of vanilla extract.
If you happen to have a chai spice blend that you love on hand, feel free to use about 2 teaspoons of that instead. This is my favorite mix, but if you happen to love certain spices more than others, adjust to make the spices exactly what you love.
Start by adding 3 1/2 cups of almond milk and 1/2 cup of heavy cream in a medium saucepan and bring them to a low simmer over medium high heat.
Once simmering, add 2 cups of old fashioned oats, 3 tablespoons of brown sugar, 1 teaspoon of ground cinnamon, 1/2 teaspoon of salt, 1/4 teaspoon of ground ginger, 1/4 teaspoon of all spice, 1/4 teaspoon of cloves, 1/4 teaspoon of nutmeg, 1/8 teaspoon of cardamom, a pinch of black pepper and 1 teaspoon of vanilla extract and whisk to combine.
Simmer uncovered for about 6 minutes or as instructed by the manufacturer of your oats.
Once the oats are tender and most of the cream has been absorbed, transfer the saucepan off of the heat and let it sit for about 2 minutes.
Divide the oats into bowls and garnish with granola and a splash of almond milk.
These oats are so beautifully creamy and my entire kitchen is full of a warm chai aroma that makes everything feel cozy and wonderful. Its amazing how much a good breakfast can impact the start of your day.
These oats are perfect for meal prepping too. Their creaminess lends to very easy reheating later on, so you can have a great breakfast all week long! Now thats a win in my book for sure.
