Creamy Cucumber Salad

This creamy cucumber salad is a wonderfully refreshing side dish to everything from burgers to fish and kebabs to barbecue chicken. If you have a mandolin or food processor that will do thin slices of cucumber quickly, the whole thing comes together in 5 minutes making it a delicious side dish or quick snack that you can whip up anytime.

I have always been pretty obsessed with tzatziki sauce and this reminds me of a deconstructed tzatziki sauce with the creaminess, the fresh dill and of course the cucumbers. This creamy cucumber salad is delicious as soon as you mix it up, but it gets even better after chilling in the refrigerator a while, so this is a wonderful dish to make ahead.

Let’s get started…

While you can mix the “dressing” ingredients first and then add the rest, I usually just combine everything in the same bowl. If you have a large enough bowl, you should have no problem evenly distributing everything.

You will need 16 ounces of thin sliced baby cucumbers, 1/3 cup of thinly sliced red onion, 1/3 cup of chopped fresh dill, 1/3 cup of sour cream or plain greek yogurt, 1/4 cup of mayonnaise, 3 tablespoons of rice wine or white vinegar (I prefer rice wine), 1 teaspoon of granulated sugar, 1 teaspoon of salt and a pinch of black pepper.

Give everything a good mix. It may seem like there is not enough dressing at first, but keep mixing! Lightly dressing the cucumbers allows them shine, so you will still get that great feeling of a creamy element without the cucumbers being weighed down by a lot of other ingredients.

I am pretty obsessed with this little salad. If you are ever in need of something special to serve alongside dinner then this is it!

As long as you have cucumbers on hand, you probably have everything you need to bring this creamy cucumber salad together. It is a flexible recipe, so if you don’t have fresh dill you can use dried… if you don’t have red onion feel free to use a yellow one… if you don’t have rice wine or white vinegar use what you do have on hand. The flavors may vary a bit, but this recipe is one that you can have a little fun with!

Ingredients

  • 16 ounces of baby cucumbers, thinly sliced
  • 1/3 cup of red onion, thinly sliced
  • 1/3 cup of fresh dill, chopped
  • 1/3 cup of sour cream or plain greek yogurt
  • 1/4 cup of mayonnaise
  • 3 tablespoons of rice wine vinegar or white vinegar
  • 1 teaspoon of granulated sugar
  • 1 teaspoon of salt
  • a pinch of black pepper

Instructions

  • Combine 1/3 cup of sour cream or plain greek yogurt with 1/4 cup of mayonnaise, 3 tablespoons of rice wine or white vinegar, 1 teaspoon of granulated sugar, 1 teaspoon of salt and a pinch of black pepper in a large bowl
  • Add 16 ounces of thinly sliced baby cucumbers, 1/3 cup of thinly sliced red onions and 1/3 cup of chopped fresh dill and mix until completely combined
  • Chill in an airtight container for up to 3 days
