Did you know that your enchilada choices are no longer limited to simply red or green? Yep. There is a third and some may say even more exciting option and their name is suiza… enchilada suiza.
Enchilada suizas are flavored with traditional green chili based enchilada sauce on the inside and then smothered with a creamy white sauce and cheese over top of everything. They are spicy and cheesy and creamy and perfect.
Let’s get them started…
Start by whisking together 1/2 cup of sour cream, 1/3 cup of heavy cream and 1/8 cup of green enchilada sauce. This simple combination will later become one of your very favorite white sauces… just wait… you’ll see….
Set the sauce aside and gather 6 flour tortillas, shredded chicken, 8 ounces of shredded mozzarella and 1 cup of green enchilada sauce. You can use a jar of your favorite store bought enchilada sauce or you could whip up a batch of my spicy green enchilada sauce.
Spoon some green enchilada sauce onto a flour tortilla and add some shredded chicken and shredded cheese. You want them to be full, but easy to roll tightly.
Repeat this process with the remaining tortillas and place them all onto a baking sheet close together and seem side down.
If you have any left over shredded chicken, tuck it in between the tortillas and then cover everything with the remaining shredded mozzarella.
Now, grab that white sauce and drizzle it over everything…
Bake the enchiladas in a 350 degree oven for 20 minutes or until the cheese is all melted and gooey. As the mozzarella melts, the white sauce becomes all bubbly and perfect.
Once the enchiladas are ready, transfer the pan onto a heat proof surface, such as a wooden cutting board, and sprinkle some crumbled cojita and finely chopped cilantro over everything. Give the enchiladas a few minutes on the baking sheet before plating them. This will allow the melted cheese and white sauce to set up a bit and then they will be really easy to separate and plate up.
Look at how the ends of the tortillas get all browned and crispy, but the center of each enchilada is soft and melty and so delicious. You get a bit of everything with enchilada suizas… crunch, spice, melty cheese and creaminess. The ultimate meal (in my most humble of opinions).
I like to serve a few lime wedges and some sour cream with enchilada suizas, but you can serve them up however you like! Refried beans, Spanish rice, maybe a little side salad? Whatever you want to serve with these delicious little rolls of flavor will do just fine.

Enchilada Suizas
Ingredients
- 1 boneless skinless chicken breast, cooked, shredded
- 6 flour tortillas
- 8 ounces mozzarella, shredded
- 1 cup green enchilada sauce
- 1/2 cup sour cream
- 1/3 cup heavy cream
- 1/4 cup cojita, crumbled (garnish)
- 1/8 cup fresh cilantro, finely chopped (garnish)
- lime wedges (garnish)
- additional sour cream (optional garnish)
Instructions
- Preheat your oven to 350 degrees
- Whisk together 1/2 cup of sour cream, 1/3 cup of heavy cream and 1/8 cup of green enchilada sauce and set aside
- Spoon some green enchilada sauce onto a flour tortilla, add shredded chicken and shredded cheese. Roll the tortilla tightly as you would a cigar
- Place the rolled tortilla onto a baking sheet seem side down and repeat with the remaining tortillas (see photos above)
- Sprinkle remaining shredded cheese over the tortillas
- Drizzle the white sauce over top of everything
- Bake at 350 degrees for 20 minutes or until the cheese is fully melted
- Garnish with crumbled cojita and finely chopped cilantro
- Serve with lime wedges and sour cream
