There is something special about a burrito bowl. I have always loved tacos and burritos and the act of piling all of my favorite fillings into one delicious bowl is something that I am always up for…
Todays burrito bowl combines my favorite garlic butter steak bites with brown rice, black beans, some greens and a little pico de gallo to create a hearty, flavorful bowl that you will love!
Let’s get started…
Begin by making some brown rice according to the manufacturers instructions. I suggest having about a cup and a half per burrito bowl.
While the rice is cooking, make a batch of my delicious garlic butter steak bites. Check out the full recipe here, but the quick version is to cut your sirloin, tenderloin or New York strip steak into bite sized pieces and generously season with garlic powder, onion powder, salt, cumin, black pepper and your favorite steak seasoning.
Add a tablespoon of butter and a tablespoon of olive oil into a large skillet and cook the steak bites until they are golden brown on the outside and the inside is cooked to your liking. Push the steak bites to one side of the skillet and add 3 tablespoons of butter and 3 finely minced garlic cloves to the empty side of the skillet. Cook while stirring for about 60 seconds and then toss the steak bites into the garlic butter.
The garlic butter steak bites are done.
When your rice is cooked, fluff it up and divide it between your bowls. Add a handful of arugula or shredded lettuce to each bowl. I like to have about the same amount of rice and greens in the base of each bowl.
I love adding black beans to this bowl too, but if you prefer pinto beans or even a scoop of refried beans, both work great in this burrito bowl…
Next, add your garlic butter steak bites and any additional toppings you love in your burritos. I add some pico de gallo or salsa and a big dollop of sour cream…
This is how I love my burrito bowl, but there are so many other toppings you can add! Shredded mozzarella or crumbled queso fresco, fresh tomatoes, peppers or onions, blistered corn, guacamole or pickled red onions. If you would like it in a burrito or on a taco then add it to this bowl!
The star of this bowl is definitely these garlic butter steak bites. They are tender, juicy and full of so much flavor. Although they were cooked up for a burrito bowl today, they are great along side some scrambled eggs in the morning, over a bed of greens for lunch or served with roasted vegetables or pasta for dinner.
This garlic butter steak burrito bowl is comforting meal just perfect for the days you are craving something hearty. It is bursting with flavor and will satisfy even the most hungry person in your life.
These bowls are a wonderful meal prep option as well, so make enough for a few days and enjoy them all week long….
