If croutons are your favorite salad element, you should feel no embarrassment about that. They are delicious! Little cubes of bread crisped in something wonderful and seasoned with garlic and your favorite herbs… what could beat that? Nothing. Plus, making your own croutons is a simple and easily customizable task.
Let’s get them started…
A soft french bread is my favorite choice for croutons, but Italian bread and sourdough works great too. This recipe will make about 2 cups of croutons, which requires about a 6 inch portion of french bread, but you can easily multiply the recipe if you need more croutons. Now I always want more croutons, but today I only need about 2 cups.
Start by cubing your bread and removing the crust as you go. You will also need 4 tablespoons of butter, 3 cloves of finely minced garlic and 2 tablespoons of finely chopped herbs. You can use any herb you like. Today, I am using parsley, but thyme, rosemary, dill and oregano work great, as well.
Add 4 tablespoons of butter into a large skillet and place it over medium heat. Once the butter has melted, add the garlic and herbs. Cook for 60 seconds, stirring consistently.
Right around the time that your garlic and herb butter starts to smell amazing, add your bread cubes.
Toss the bread around until each cube is coated in butter, garlic and herbs. I like to add about half of my bread, toss it around and then add the rest, but you can add it all at once, if you have a nice wide skillet.
Cook the croutons, stirring occasionally, until they are golden brown and crispy.
Once your croutons are as crisp as you like them, toss them onto a salad and get ready to give yourself a nice pat on the back…
So, the first few croutons will be eaten as “taste tests”, but try to save a few for your salad! They are buttery, crispy and full of garlicky goodness. The perfect addition to any salad.
Enjoy!!
