I love rice. It is so versatile and can be paired with so many different cuisines. In addition to pairing well with so many dishes from around the world, rice is also pretty easy to work with.

Today, we are making fried rice, but this Chinese golden fried rice is a little different from the classic fried rice that typically has scrambled eggs cooked along side the rice and then mixed in later. What makes this recipe special is that egg yolks are mixed into cooked and cooled rice before it is “fried” giving it a soft, luscious flavor and beautiful golden color. You are going to love this rice…
Let’s get started…
Begin by cooking about 1 1/2 cups of dried rice according the instructions on the packaging. Today, I am using long grain white rice, but jasmine and basmati rice works great too. You’ll need about 4 cups of cooked and cooled rice for this rice and day old rice works great for fried rice recipes, so if you have leftover rice, you can definitely use it to make fried rice.
In addition to the rice, you will need some vegetable oil, 3 large egg yolks, 1 large finely chopped shallot, 1 large carrot that has been peeled and finely diced, 3/4 cup of sweet peas, 1 tablespoon of sambal oelek, 2 tablespoons of soy sauce, 2 tablespoons of butter and 2 finely chopped green onions.
Add the cooked and cooled rice into a large bowl and mix in 3 large egg yolks with clean hands or a silicone spatula until all of the rice is coated with egg yolk.
Place a large skillet over medium heat and add a tablespoon of vegetable oil. Add the finely chopped shallots and carrot into the skillet and cook for about 5 minutes or until the carrot has softened a bit.
Add 1 tablespoon of sambal oelek, 2 tablespoons of soy sauce and 2 tablespoons of butter into the skillet and increase the heat to medium high.
Once the butter has melted and the sauce is bubbling, add the egg yolk coated rice into the skillet and spread it out all over the skillet. Let the rice cook undisturbed for a few minutes to allow the bottom to begin to crisp a bit. Toss the rice around a bit and allow other places to crisp.
Add 3/4 cup of sweet peas and the finely chopped green onions and toss to distribute.
Transfer your lightly crispy, salty, tangy golden fried rice into a serving dish and get ready to be surprised at just how delicious such a simple recipe can be…
The crispy grains of rice are my favorite part of this delicious golden fried rice. They are so fabulous, but so is the salty, buttery and tangy flavors in this tasty dish. The combination of the sautéed vegetables, soy sauce and sambal oelek add wonderful layers of flavor to the already rich, luscious egg yolk coated rice.
This golden fried rice pairs well with so many dishes, but I personally recommend beef bulgogi, General Tso’s chicken or this pumpkin curry.

Golden Fried Rice
Ingredients
- 1 tablespoon of vegetable oil
- 3 large egg yolks
- 4 cups of cooked rice, cooled
- 1 large shallot, finely chopped
- 1 large carrot, peeled, finely diced
- 3/4 cup of sweet peas, thawed
- 1 tablespoon of sambal oelek
- 2 tablespoons of soy sauce
- 2 tablespoons of butter
- 2 green onions, finely chopped
Instructions
- Place a large skillet or wok over medium heat and add a tablespoon of vegetable oil
- In a large bowl, mix 4 cups of cooked rice with 3 large egg yolks until combined and set aside
- Add 1 large finely chopped shallot and 1 finely diced carrot into the warm skillet and cook for about 5 minutes, stirring occasionally
- Add 1 tablespoon of sambal oelek, 2 tablespoons of soy sauce and 2 tablespoons of butter and toss to combine
- Add the egg yolk coated rice into the skillet and increase the heat to medium high
- Cook, tossing occasionally, for about 5 minutes or until the rice begins to slightly crisp
- Mix in 3/4 cup of sweet peas add green onions and enjoy!
