Colorful, bright, flavorful and filled with fabulous textures… this is a greek salad. Vine ripened tomatoes, cucumbers, sweet peppers, red onion, olives and feta cheese are combined with crunchy pita croutons and a creamy mediterranean dressing to create my ultimate greek salad.
Let’s get it started…
Begin by gathering about 2 cups of vine ripened or cocktail tomatoes, a small english cucumber, a sweet pepper, 1/2 cup of thinly sliced red onion, 1/2 cup of kalamata olives and 1/2 cup of crumbled feta cheese.
Chop everything up, transfer it into a large bowl and now that the base is ready to go, we need a great dressing and some croutons…

- Pita Croutons: tear 2 pitas into bite sized pieces and spread them out over a baking sheet. Drizzle with olive oil and generous season with sea salt, garlic powder and black pepper and bake in a 375 degree oven until they are nice and crisp.
- Salad Dressing: you can absolutely use your favorite mediterranean inspired dressing or you can whip up my favorite lemon feta dressing… which is highly recommended.

Add the croutons, drizzle some dressing over everything and toss until all of the ingredients are evenly distributed.

Ingredients
Greek Salad
- 2 cups of vine ripened or cocktail tomatoes, chopped
- 1 small english cucumber, chopped
- 1 sweet pepper, chopped
- 1/2 cup of red onion, thinly sliced
- 1/2 cup of kalamata olives, halved
- 1/2 cup feta cheese, crumbled
- leafy greens (optional)
Pita Croutons
- 2 pita breads, torn
- olive oil
- sea salt, garlic powder and black pepper
Instructions
- Preheat your oven to 375 degrees
- Tear 2 pitas into bite sized pieces and spread over a baking sheet. Drizzle with olive oil and generously season with sea salt, garlic powder and black pepper. Bake until crisp.
- Combine the tomatoes, cucumber, sweet peppers, red onion, olives and feta crumbles in a large bowl
- Add 1/2 cup of Greek salad dressing and toss to combine
- Optionally serve over leafy greens and top with crisp pita croutons
