Greek Yogurt Frosting

Greek yogurt is a must-have in my refrigerator. I like to keep both vanilla and plain on hand at all times. Vanilla for breakfast and mid afternoon snack emergencies and plain for making sauces, marinades and for baking.

It is super versatile, high in protein and today, we are making an addictive frosting that will have you licking the bowl clean. Let’s get started…

The first step is to strain excess liquid from the yogurt. Although greek yogurt is much thicker than regular yogurt, many of them still contain excess liquid that will make your frosting watery.

To remove this excess liquid, add 2 cups of plain greek yogurt into a mesh strainer lined with paper towels. Place the strainer over a bowl and let it sit in your refrigerator overnight. The next day, you will be left with the perfect yogurt to make frosting with.

Note: The Greek Gods yogurt brand is the only one that I have found that doesn’t need straining. It is super thick and even after 12 hours of straining, no excess liquid is released. I highly recommend this yogurt!

Add the strained yogurt into a bowl and add 2/3 cup of confectioners sugar (use powdered monkfruit as a sugar alternative!) and 1 tablespoon of fresh citrus juice of your choice. I also like to zest the citrus that I am juicing into the frosting for an even bigger punch of citrus flavor.

Use an electric hand mixer to whip everything together until it is thick and creamy.

Do a quick taste test and add a little more confectioners sugar if the frosting is not sweet enough for you. You can also add a splash of vanilla extract to mellow out the tartness in the citrus.

This frosting is fantastic! Something I could literally eat with a spoon. It is perfect on anything that needs frosting, but I especially love it on a more healthy dessert. It just feels right.

Ingredients

  • 2 cups of plain greek yogurt, strained
  • 2/3-1 cup of confectioners sugar
  • 1 tablespoon of fresh citrus juice
  • a splash of vanilla extract (optional)
  • citrus zest (optional)

Instructions

  • Add 2 layers of paper towels into a mesh strainer and set it over a large bowl
  • Add 2 cups of plain Greek yogurt into the strainer and refrigerate overnight to allow the excess liquid to drain from the yogurt 
  • Transfer the drained Greek yogurt into a large bowl along with 2/3 cup of confectioners sugar, 1 tablespoon of fresh citrus juice and some optional citrus zest and vanilla extract
  • Whisk vigorously or mix with an electric hand mixer on high for 2-3 minutes or until super creamy
  • Taste and add additional confectioners sugar or a splash of vanilla extract, if desired
