Green Apple Pecan & Goat Cheese Salad

All you’ll need is some baby arugula, granny smith apples, candied pecans and goat cheese… at least for the salad part. Simple ingredients, each with their own huge impact.

For the dressing, you will want to whip up my maple dijon dressing, which combines olive oil, maple syrup, apple cider vinegar, dijon mustard, garlic, salt and black pepper. Simply delicious.

This recipe is so simple that it really requires no order or technique. Just top a big pile of baby arugula with thinly sliced green apples, roughly chopped candied pecans and crumbled goat cheese.

Green Apple Pecan & Goat Cheese Salad

Ingredients

  • 3 ounces of baby arugula
  • 1/2 cup of candied pecans, roughly chopped
  • 2 ounces of goat cheese, crumbled
  • 2 small granny smith apples, thinly sliced

Maple Dijon Dressing

  • 1/3 cup of extra virgin olive oil
  • 2 tablespoons of pure maple syrup
  • 2 tablespoons of apple cider vinegar
  • 2 teaspoons of dijon mustard
  • 1 small garlic clove, finely minced
  • 1/4 teaspoon of salt
  • a pinch of black pepper

Instructions

  • Combine the maple dijon dressing ingredients in a small bowl and whisk vigorously until completely combined
  • Layer the salad ingredients in a large bowl and drizzle with dressing to taste.
