Honey Roasted Carrots

Carrots are really underrated. They are naturally delicious and full of fiber, Vitamin A and beta-carotene, which help to control blood sugar levels and improve bone health. Plus, they are a great pop of color to any plate that they bless their beautiful presence with.

These honey roasted carrots are tender and flavorful with just the right amount of sweetness. They pair great with pot roast and grilled chicken, they make a great addition to a protein bowl and are perfect in a warm winter salad.

Let’s get started…

Begin by peeling 1 pound of carrots and chopping them into bite sized pieces.

In a small bowl, combine 2 tablespoons of olive oil, 2 tablespoons of honey, 1 tablespoon of brown sugar and 1 teaspoon of seasoned salt (I love Lawry’s seasoned salt with these carrots).

Place the carrots into a baking dish and add the olive oil mixture. The mixture may be a little clumpy, but it will melt down as the carrots roast. Toss the carrots to coat them in the mixture and place the dish in a 375 degree oven.

Roast the carrots for about 30 minutes or until they are tender. Occasionally, toss the carrots around to recoat them in the olive oil mixture as they roast.

These carrots are just wonderful. Warm, comforting and sweet. I always make a double batch and reheat the leftovers the next day with some leafy greens and balsamic vinegar. Its delicious, healthy and filling.

Ingredients

  • 1 pound of carrots, peeled and chopped
  • 2 tablespoon of olive oil
  • 2 tablespoons of honey
  • 1 tablespoon of brown sugar
  • 1 teaspoon of seasoned salt

Instructions

  • Preheat your oven to 375 degrees 
  • Place peeled and cut carrots onto a parchment lined baking sheet
  • In a small bowl, combine 2 tablespoons of olive oil, 2 tablespoons of honey, 1 tablespoon of brown sugar and 1 teaspoon of seasoned salt and drizzle over the carrots
  • Toss until all of the carrots are coated
  • Roast the glazed carrots for about 30 minutes or until tender
  • Garnish with fresh parsley and a light sprinkling of sea salt
