Lemon Poppyseed Dressing

Lemon poppyseed dressing is such a classic. Bright and cheerful with a little bit of tartness and tang… the perfect dressing for spring and summer salads. Like most dressings, this lemon poppyseed dressing is super easy to make and requires just a few pantry ingredients.

Making your own dressing allows you to customize the flavors to your liking and gives you a dressing that you can actually list the ingredients of. Fresh, healthy and exactly how you want it…. sounds great, right?

Let’s get started…

Begin by gathering 1/2 cup of fresh lemon juice, 1/2 cup of extra virgin olive oil, 1/8 cup of white wine vinegar, 1/8 cup of agave or honey, 1 tablespoon of your favorite dijon mustard, 1/2 teaspoon of salt and 1 tablespoon of poppyseeds (I love Spice Islands Poppyseeds).

Combine everything in a food processor, blender or bowl (if you have a good strong whisking arm!) and blend for 20-30 seconds. I have also started whisking homemade dressings with my frother and it works great! This dressing is not thick, so it won’t put any unnecessary stress on your frother.

You want everything fully combined and bubbly. The mixture should be a pale yellow and the olive oil should be fully incorporated.

Note: Some recipes suggest you blend or whisk the dressing prior to adding the poppyseeds, but I usually just toss everything in together and have never had any issues. 

Done.

Give the dressing a taste and if you prefer your dressing to be a bit more salty, add another pinch of salt. If it’s not sweet enough for your, add more agave or honey. If you want more lemon, you can add more lemon juice or even some lemon zest.

These amounts are perfect for how I want my lemon poppyseed dressing, but when you make yours, make it how you want it and then drizzle it over your favorite greens and enjoy!

This lemon poppyseed dressing is bright, lemony and full of just the right amount of tanginess and tartness. It is sweeter than most dressings, but not too sweet. Just right.

Add this dressing to a strawberry salad, use it as a tangy vegetable dip or simply drizzle it over a bowl of fresh greens. However you decide to use this dressing, I just know that you are going to love it!

Ingredients

  • 1/2 cup of fresh lemon juice
  • 1/2 cup of extra virgin olive oil
  • 1/8 cup of white wine vinegar
  • 1/8 cup of agave or honey
  • 1 tablespoon of dijon mustard (plain, honey or spicy)
  • 1 tablespoon of poppyseeds
  • 1/2 teaspoon of salt

Instructions

  • Combine 1/2 cup of fresh lemon juice, 1/2 cup of extra virgin olive oil, 1/8 cup of white wine vinegar, 1/8 cup of honey, 1 tablespoon of dijon mustard, 1/2 teaspoon of salt and a tablespoon of poppyseeds in a blender or food processor or in a bowl with a stiff whisk or frother.
  • Blend until combined and full of bubbles (20-30 seconds).
  • Serve immediately or chill in an airtight container.
