Lemon Vinaigrette

It’s nice to have a fresh and simple dressing that take a few minutes to make and goes with everything. This lemon vinaigrette is bright and flavorful and compliments everything from a light side salad to a complex salad niçoise.

With a lemon, some white wine vinegar (or you favorite dressing vinegar), olive oil, honey and garlic, you can make a fabulous fresh vinaigrette.

Let’s get started…

In a glass jar or the vessel of a blender, combine 1/4 cup of freshly squeezed lemon juice, 1/4 cup of white wine vinegar, 1/3 cup of extra virgin olive oil, 1 large crushed garlic clove, 1 teaspoon of honey and a pinch of salt and black pepper.

If you are using a jar, put the top on and shake the dressing vigorously until everything is fully incorporated. If you are using a blender, pulse it a few times until the dressing is thick and a bright, creamy yellow.

Take a quick taste test and add more honey, salt or black pepper, if necessary. If you are ready to use the dressing now, drizzle it on everything! Greens, veggies, roasted potatoes, pan seared fish… this vinaigrette pairs well with so many dishes.

If you are making it ahead, transfer it into an airtight container and keep it at room temperature for a few hours or chill it for longer. Give the dressing a vigorous shake before adding it to your dish.

It’s bright, fresh, tangy and citrusy! This lemon vinaigrette is a great, versatile dressing to keep on hand and add to anything needing a little kick of fabulousness.

Ingredients

  • 1/4 cup of freshly squeezed lemon juice
  • 1/4 cup of white wine vinegar (or your favorite dressing vinegar)
  • 1/3 cup of extra virgin olive oil
  • 1 teaspoon honey
  • 1 garlic clove, crushed
  • a pinch of salt and black pepper

Instructions

  • Combine 1/4 cup of freshly squeezed lemon juice, 1/4 cup of white wine vinegar, 1/3 cup of extra virgin olive oil, 1 large crushed garlic clove, 1 teaspoon of honey and a pinch of salt and black pepper in a jar or the vessel of a blender
  • Shake or blend until all of the ingredients are fully incorporated
  • Use immediately or chill in an airtight container
