Peach & Poblano Salsa

We are deep in the heart of peach season and I love exploring the many ways to use this naturally sweet, extra juicy fruit.  Combining them with zesty red onions, flavorful poblano and fresh cilantro makes for one fabulous salsa that pairs well with everything from tacos to barbecued chicken or a nice pan seared salmon.

The flavors are fun, the texture is amazing and the pairings are endless. Sound like something you’d like?

Then, let’s get started…

Begin by dicing a large peach and placing it into a mixing bowl. Next, remove the seeds and stem from a medium poblano pepper and dice that up too. Add about 1/3 cup of diced red onion and a big handful of finely chopped fresh cilantro along with 2 tablespoons of freshly squeezed lime juice and a big pinch of salt and black pepper.

Toss everything to combine.

It is colorful, flavorful salsa that I love to enjoy in so many different ways. The combination of these flavors with barbecue is amazing, so I serve it over bbq chicken or with ribs or wings. I also love what it adds to tacos, so whether you are making spicy ground beef tacos or saucy shredded chicken tacos, add a scoop of this peach and poblano salsa and you are going to love what it adds.

My absolute favorite way to enjoy this peach and poblano salsa is with my ponzu salmon. A piece of that sticky, tangy salmon along with the sweet peach salsa is a combination that I dream about often and once you give it a try, I bet you will too…

Ingredients

  • 1 large peach, diced
  • 1 medium poblano, diced
  • 1/3 cup of red onion, diced
  • 1/3 cup of fresh cilantro, finely chopped
  • 2 tablespoons of fresh lime juice
  • a pinch of salt and black pepper

Instructions

  • Combine all of the ingredients in a bowl
  • Serve immediately
