
Hello friends! I am here with yet another granola muffin recipe and this one is every bit as special as the rest (or if you ask my husband… the best one yet). These beauties are full of peanut butter and chocolate – aka one of the best food pairings ever.

The combination of oats, nuts, cinnamon, peanut butter and chocolate create moist, chewy muffins that are just sweet enough to feel like a treat without the addition of processed sugars, but also full of nutritional benefits. They are a delicious way to start your day and the perfect answer for any late afternoon sugar cravings.
Let’s get started…

In a large bowl, whisk 3 large eggs with a cup of your favorite milk, 1/3 cup of pure maple syrup, a teaspoon of pure vanilla extract and 2/3 cup of peanut butter.
You can use any milk and creamy or chunky peanut butter in these muffins.
Add 2 1/2 cups of old fashioned oats, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of salt, 1/2 cup of chopped pecans or walnuts, 1/2 cup of chocolate chips and an optional teaspoon of ground cinnamon.

Mix until everything is fully combined and then divide the batter between a standard sized 12 cup muffin tin.
Note: Be sure to divide the liquid in the batter evenly between all of the cavities, so each muffin gets an equal potion.

Bake the muffins in a 350 degree oven for 22-24 muffins or until the muffins feel set in the center.

These muffins have a beautifully moist and chewy texture and the flavors give that nostalgic peanut butter and chocolate pairing that most of us crave regularly.

Peanut Butter Chocolate Chip Granola Muffins
Ingredients

- 1 teaspoon of ground cinnamon (optional)
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of pecans or walnuts, chopped
- 1/2 cup of chocolate chips or chopped chocolate
Instructions
- Preheat your oven to 350° and line a 12 cup muffin tin
- In a large bowl, whisk 3 large eggs, 1 cup of milk, 1/3 cup of pure maple syrup, 1 teaspoon of pure vanilla extract and 2/3 cup of peanut butter until smooth
- Add 2 1/2 cups of old fashioned oats, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of salt and an optional teaspoon of ground cinnamon and mix until just combined
- Fold in 1/2 cup of chopped pecans or walnuts and 1/2 cup of chocolate chips until evenly distributed
- Divide the batter between the muffin cavities
- Bake in a 350° oven for 22-24 minutes
