Pineapple Mango Smoothie Bowl

Do you have any idea how easy it is to blend up a fabulous smoothie bowl right in your own kitchen? So easy… and as long as you have a good blender or a large food processor, you are just minutes away from enjoying a thick, creamy smoothie bowl full of fresh fruit, yogurt and loads of vitamins, minerals and antioxidants.

Let’s get started…

Begin by gathering 16 ounces of frozen, cubed mango, 2 cups of cubed pineapple (fresh works best, but frozen pineapple is fine as well) and 1 medium banana. You will also need 1/2 cup of Greek yogurt and some pineapple juice. I prefer to use full fat vanilla Greek yogurt as it adds the most flavor and additional creaminess to the texture of the smoothie bowl, but plain or low fat yogurt will also work fine as well.

This will be enough for 2 smoothie bowls. You can cut the recipe in half for a single serving, but I always make the whole recipe and freeze the leftovers for the next morning.

Combine the mango, pineapple, banana and yogurt into a blender or large food processor and blend until smooth. Add between 1/4 and 1/2 cup of pineapple juice to thin the smoothie to your desired consistency.

Transfer the mixture into two shallow bowls and garnish with yogurt, granola or fresh fruit or all three!

It’s amazing how smooth and creamy the simple combination of fruit, yogurt and fruit juice can become. I love adding some honey oat granola, blackberries and blueberries to this bowl. The tartness of the blackberries and the sweetness of some fresh blueberries really adds a great layer of flavor to the beautiful flavors already in this delicious smoothie bowl…

The flavors of the mango and pineapple pairs so well together and the banana and yogurt adds to the thick, creamy texture to this bowl. If you have a hard time finding pineapple juice, you can substitute with mango juice or even almond milk. Both work really nicely in this bowl.

Ingredients

Instructions

  • Combine 16 ounces of frozen mango, 2 cups of fresh pineapple, 1 medium banana and 1/2 cup of vanilla Greek yogurt in a blender or large food processor
  • Blend until smooth
  • Add 1/4-1/2 cup of pineapple juice to thin to your desired consistency and blend to combine
  • Serve garnished with granola, fresh fruit or yogurt (optional)
