Raspberry Coulis

Raspberry coulis is versatile sauce celebrating the beautiful flavor of fresh raspberries that pairs perfectly with everything from ice cream sundaes to pancakes. It can be served warm, cold or at room temperature and comes together in just a few minutes.

Let’s get started…

Start by adding 10 ounces of fresh raspberries, 1/4 cup of granulated sugar, 2 tablespoons of orange juice and a teaspoon of vanilla extract into a saucepan and place over medium heat. Bring the mixture to a simmer and let it simmer until the raspberries begin to break down. This should take just a few minutes, so stay close by and remove the sauce pan from the heat as soon as it begins to happen.

This recipe will give your coulis a nice, loose consistency, but if you prefer your coulis to be thicker then add 2 teaspoons of cornstarch into the mixture and whisk to incorporate. Allow the mixture to simmer for another minute or two and remove it from the heat as soon as it has thickened to your preferred texture.

I love the texture that the fresh raspberry seeds create in this coulis, but if you prefer a smoother sauce then you have a few options.

You can pulse the mixture in a blender or food processor until smooth and if it is still not quite smooth enough, you can pass the coulis through a fine mesh strainer.

Ingredients

  • 10 ounces of fresh raspberries

  • 2 tablespoons of orange juice

  • 2 teaspoons of cornstarch (if thickening if desired)

  • Combine 10 ounces of fresh raspberries, 1/4 cup of granulated sugar, 2 tablespoons of orange juice and a teaspoon of vanilla extract into a saucepan and place over medium heat
  • Simmer until the raspberries begin to break down
  • Use immediately or blend until smooth
  • Store in an airtight container in the refrigerator for up to 3 days
