Roasted Smoked Sausage with Mixed Vegetables

If you have a simple sheet pan meal recipe in your back pocket, you will always have a go-to meal for busy nights or those days when you just don’t feel like standing over your stovetop and babysitting something until it is finished.

Today, we are making roasted smoked sausage with mixed vegetables and there are a few things I absolutely love about this meal – you can pack all sorts of vegetables into this meal, it’s pretty much set it and forget it and with just a bit of olive oil and some spices, you’ll have a delicious, flavorful meal… no sauce required.

Let’s get started…

While you can substitute your favorite vegetables or what you have on hand in this recipe, this is my favorite combination of ingredients.

Start by peeled and chopping 2 large russet potatoes and 2 large carrots into bite sized pieces. Place them onto a large baking sheet, drizzle with olive oil and season generously with seasoned salt, garlic powder and onion powder. This is all I use and it turns out incredible, but feel free to add any other spices that you love.

Roast the potatoes and carrots in a 425 degree oven for 20 minutes while you prepare the other ingredients.

While the potatoes and carrots are getting a head start, slice 24 ounces of smoked sausage into bite sized pieces and spread them out over a small baking sheet. I like to cook the sausage separately on its own, so it has a chance to caramelized before we combine it with the vegetables. If you prefer to add everything onto a really big baking sheet, thats totally fine, you may just have a more steamed consistency instead of the caramelized, because the ingredients will be more crowded it everything is cooked on the same baking sheet.

Chop a medium yellow onion, a small bundle of asparagus and 2 medium summer squash into bite sized pieces and as soon as the potatoes and carrots are done with their 20 minutes head start, pull that baking sheet out of the oven (close the oven door quickly to keep the heat trapped inside) and place it onto a heat proof surface.

Add the onions, asparagus and summer squash onto the baking sheet with the potatoes and carrots. Drizzle the ingredients on both baking sheets with olive oil and generously season with seasoned salt, garlic powder and onion powder. Toss the vegetables around and spread them out evenly over the entire baking sheet.

Transfer both baking sheets into the 425 degree oven and roast everything for another 20-30 minutes.

Now you can absolutely just let everything roast wherever it was on the baking sheet and it will turn out just fine, but you may notice that the items that are around the outer edges of the baking sheet brown more, so if you have the time, toss both the vegetables and sausage around a few times as they roast, so that everything can caramelize the same.

Once everything is caramelized and the potatoes and carrots are tender, transfer the smoked sausage and all of the juices from the baking sheet over the roasted vegetables and toss everything together.

Earlier, I mentioned the fact that this meal is so flavorful even without any sort of a sauce and the juices that come off of that smoked sausage is why. Roasted vegetables with just a little bit of olive oil and spices are already fabulous, but when you add that smoked sausage and the juices that were rendered from roasting it, a tasty meal turns into something incredibly delicious.

This meal is just so wonderfully flavorful and so easy to bring together, it has become one of the go-to meals in our home. I like to rotate it with another similar sheet pan meal, my roasted smoked sausage, sweet peppers and potatoes, which is also easy and delicious.

Ingredients

  • 2 large russet potatoes, peeled and chopped
  • 2 large carrots, peeled and chopped
  • 1 medium yellow onion, peeled and thick sliced
  • a small bundle of asparagus, sliced
  • 2 medium summer squash, stems removed and thick sliced
  • 24 ounces of smoked sausage, thick sliced
  • olive oil
  • seasoned salt, garlic powder and onion powder

Instructions

  • Preheat your oven to 425°
  • Place the potatoes and carrots onto a rimmed baking sheet, drizzle with olive oil and season generously with garlic powder, onion powder and seasoned salt
  • Roast in the 425° oven for 20 minutes while you prepare the other ingredients 
  • When the potatoes have been in for 20 minutes, transfer the baking sheet onto a heat proof surface and add the onion, summer squash, asparagus and smoked sausage
  • Optionally, you can roasted the smoked sausage separately on a small baking sheet to give it better caramelization on its own
  • Drizzle lightly with olive oil, season with garlic powder, onion powder and seasoned salt and return to the 425° oven
  • Roast for an additional 20-30 minutes or until the potatoes are tender and everything is lightly caramelized 
  • If you roasted the smoked sausage separately, add it along with all of the juices from the baking sheet over the vegetables and toss everything together before serving
  • Serve with a small salad and crusty bread
