Sausage and peppers is a classic and today, we are roasting it up on a sheet pan with some baby red potatoes to make a super simple, flavorful meal that is a perfect mid-week dinner or meal prep, because it is so darn easy.

This recipe creates 6 medium sized servings or 4 larger portions.
Begin by halving or quartering 24 ounces of baby red potatoes. You want them all to be about the same size, so they roast evenly. If you don’t like or can’t find baby red potatoes, any potato will work fine.
Spread the potatoes out over a rimmed baking sheet and drizzle them with olive oil. Toss the potatoes around a bit, so they are all coated with oil and then generously season with seasoned salt, garlic powder and onion powder.
Roast the potatoes in a 425 degree oven for 20 minutes while you prepare the other ingredients.
Thickly slice 3 large sweet bell peppers and discard the stem and seeds.
Slice a large yellow onion into similar sized slices and slice your smoked sausage into thick rounds about 3/4 inches thick.
Add everything onto a rimmed sheet pan, drizzle with olive oil and generously season the same way you did the potatoes.
Once the potatoes have been roasting for 20 minutes, reduce the ovens temperature to 400 degrees and toss the potatoes around a bit.
Add your second baking sheet and roast for another 20-30 minutes or until the potatoes are tender and the sausage and peppers are lightly caramelized.
I like to mix everything around every 10 minutes or so to make sure it all roasts the same.
Once everything is tender, caramelized and smelling incredible, pull it out of the oven and enjoy! It’s that easy… just slice, season, roast and serve.
This smoked sausage, peppers and potatoes is delicious as is, but I like to serve it with a small salad and some crusty bread. It is a filling, comforting meal that comes together easy and is wonderfully flavorful.

- 24 ounces of baby red potatoes, halved or quartered
- 3 sweet bell peppers, thick sliced
- 1 large yellow onion, thick sliced
- 24 ounces of smoked sausage, thick sliced
- olive oil
- seasoned salt, garlic powder and onion powder
Instructions
- Preheat your oven to 425°
- Place the halved potatoes onto a rimmed baking sheet, drizzle with olive oil and season generously with garlic powder, onion powder and seasoned salt
- Roast in the 425° oven for 20 minutes while you prepare the other ingredients
- Place the thick sliced peppers, onions and smoked sausage onto a rimmed baking sheet, drizzle with olive oil and season generously with garlic powder, onion powder and seasoned salt
- When the potatoes have been in for 20 minutes, reduce the ovens heat to 400° and add the baking sheet with peppers, onions and sausage and roast for another 20-30 minutes or until the potatoes are tender and the peppers, onions and sausage are lightly caramelized
- Serve with a small salad and crusty bread
